Jamaican Jerk Chicken on Charcoal Grill - How to

  • In this video I will walk you through on How to Grill Jamaican Jerk Chicken! I will do it on my charcoal grill while explaining step-by-step the whole process.
    Jerk Chicken is to be cooked over wood fire, but not all of us have the possibility to do it! So the next best choice is to cook the Jerk Chicken on charcoal grill 😎.
    For this recipe I fired up my Weber Kettle and I set it up in two zones. Once you have the chicken ready (as described in the video), add the wood to the coals and then place the chicken on the hot part of the grill. Turn it occasionally until it reaches the color you like. After that move the chicken to the indirect heat zone and finish cooking. NOTE: close the grill lid while cooking in order to retain the smoke in the cooking chamber (this will enhance the smoke flavor of the chicken). In my case total cooking time was 35 min (15min direct grilling+20min indirect heat).
    If you use thermometer, you can remove the chicken when int temp reaches 71°C (160 °F) and then let it rest while you have it covered. The carry on temperature will finish cooking the chicken.
    ➡ Ingredients:
    3 Chicken quarters (or your preferred part of the chicken)
    1 Onion
    3 Scallions
    1 Scotch bonnet chili (If you like it hot then add more!)
    1 Garlic bulb
    1 TBSP Five-spice powder
    1 TBSP Allspice berries (Use coarsely ground if you find it)
    1 TBSP Coarse Ground Black Pepper
    1 tsp dried thyme
    1 tsp nutmeg (you can either grate it or buy it ready from supermarket)
    1 tsp Kosher Shalt
    1/4 Cup Soy sauce
    1 TBSP olive oil (approximately)

    you can put the season on pork and you get jerk pork, or lamb. the seasoning can you use on any meat.

      This is a great idea! It actually came to mind when I was trying it for the first time. I'm very curious on how it would go with lamb 🤔

      FYI: jerk chichen is eaten with a little ketchup and white bread. you can add some of the jerk seasoning you made to barbeque sauce, cook it down and you get jerk bbq sauce. i did jerk rib and it was delicious.

      @@foodlover3036 Oh well this I did not know. Perhaps next time I cook it I will have it with it white bread. Interesting idea to have it with the ribs. Gotta try it as well! (sounds yummy)
