So I tried this recently for a friend who loves tofu. It came out very good. The only thing is that we thought that it was a little "tough". What can I do to make it more moist?

I can appreciate the effort put into this recipe but unfortunately the smoking portion needs so much work. Reach out to a pit master and ask for some insight and training on smoking food. You'll find that the corn starch and the tinfoil tray under your product are bad practice.

That's a tough one. I'd say either lower cooking temperature and cook it longer, or just cook it longer in general. I love that ultra charred vibe. ♥️
