Nice video! I also use the Lansky system. I use a diamond hone for profiling first, then move to stones, then finish with a strop. I encourage disassembling the knife! Just having the blade in the clamp makes it easier to handle. Also, no worries about dust getting into the action, since you’re cleaning and oiling it upon reassembly!

You don’t oil the stone a little before starting to grind.
