This reminds me of a recipe in The Smitten Kitchen cookbook by Deb Perelman for buttered popcorn cookies! The base recipe is akin to the traditional recipe for chocolate chip cookies but instead calls for popcorn to be folded in rather than chips. The recipe is marvelous and we tried the same recipe adding crumbled potato chips and they were delicious! (P.s. we shortcut-ed the recipe, using microwave popcorn and it worked.)
::LOL:: I did the same thing once when I was visiting my now fiance; I accidentally brought home unsalted butter--I don't mind either way--and boy, did he notice when he put some on his toast! As to the other person who said you can salt it yourself, yes, but I do get the sentiment of the original comment--it's not quite the same. I'm surprised Michael didn't decide to break off our engagement because of my mistake. Hahaha.

I think I would flatten them more and bake them more, because I don't like a pale cookie; I like them more done on the bottom. These do look like Sandies!
I'm surprised you don't have an even bigger cookie scoop. I have a large one which I use for muffin batter; it would make some pretty big cookies! I have an ATK book with a potato chip cookie recipe.. Haven't tried it yet since I never have the potato chips to make them.
Ooh, how neat! I'm not as well-versed in different types of cookies; I do love to bake, but nmost of what I've made have been cakes and breads--last time I made cookies, I spaced out and burned them. OOOOOOpS. Anyway, these sound interesting. My fiance would love your cookies then Tami, if they are too big. He loves giant cookies. I've heard of popcorn being used in cookies so the idea of potato chips isn't shocking to me; my only problem is I'm a potato chip junky so the whole bag would most likely be gone before they made it into the cookies. ::LOL:: I'll just stay with cakes and breads. I wonder if you saved some of the potato chips and when done mixing, fold them in? I would want you to taste more of the salty of the chip. I do love Pecan Sandies, so I would like this recipe. Thanks for a yummy review.
They turned out well but a little plain for my liking. The Lays were probably a replacement for adding salt, not for the texture of the crisps. Thanks for the review and recipe.
Since Between the Lions taught a lot about vowels, does anybody think Between the Lions should have had a game similar to Wheel of Fortune in which Theo hosts the show and Cleo turns over the letters?
