I have always enjoyed your show when I catch it...didn't think of looking on UA-cam to get to your site. I'm from California but,moved to Michigan 21 years so needless to say where we moved to didn't ave anything ethic..lol So I went to my memory to do recipes I watched my mother do over the years I've perfected it. But,the one thing I missed a lot was tamales driving to Grand Rapids to find a Mexican store was difficult. But,I grew up on going to the Mexican bakeries to get fresh masa of course my mom would add other things. So after years of experimenting I use corn flour from the ethic side of the grocery store but,years ago my mom stopped using lard for the masa trying healthier kind because of her heart, I use juice from the meat drained of the grease I added water...my aunt thought I was crazy lol. It worked but,I always have issues steaming I do like the idea of husks bottom n top do you leave the lid on the whole time? Because mine always staying cooked in parts so I end up lifting the lid a bit to help to dry it out. I also use a pot the same as yours but,has a steamer pot inside so I wonder if the husks would still work? Also I spread my masa a bit more than you do I wrap the same way though...years of finding other ways to cook. Sorry for such a long comment I was excited if there was another way make n cook my tamales. I have used pork,beef,chicken,Ground meat ...deer that taste better with sauce. We don't hunt but, we have some who give it to us took awhile to try that lol I hope you get this Denise

She did not mentioned. As mexican, i can see that the filling is chicken breast with salsa verde. Always has to be one of salsa verde. You can fill with pork and salsa cerde, jalapeños and cheese, or just cheese, chesse and beans, mole, vegetables (nopales, for example) with salsa roja. You put a piece of chiken (a leg) with salsa roja, even shrimps with salsa roja . Deliciuos. You can play with flavours. And there are sweet tamales too.

Hi hon, this is Mrs. P. Martinez, i added too much massa flour! I didn't realize i had a 4lb bag not a 1lb bag. I went through haft the bag. I used 4 cups of chicken broth. I mixed till my mixer got hot. My massa didn't float. Is it saveable?😣
Hi Patty this is Laurie. My massa was fixable! I added a cup of lard into the mixer and wipped it and then added the baking soda, salt and the baking powder. Then i mixed in the first batch a little at a time. And it worked! The massa floated! I made my pork tamales and had just enought massa. My husband liked them so much. That he ate with a smile! i stressed out so much. I know better, to pay more attention to the recipe!

Yes you can make sure to store them in a ziploc bag laid flat in your refrigerator and if you don't feel like steaming all of them you can freeze them and defrost night before you want to steam them cause cooked tamales from the freezer usually taste a bit dry so storing them uncooked is better, that's according to two of my boys who eat my tamales throughout the year and my customers who buy them religiously from me every year.
