From what I can tell whenever sans has his magic eye or pupilless eyes he's using a specific type of magic(ex:magic eye is exclusively for telekinesis) his pupil is gone because he uses magic to sustain his life GBs use a large quantity of magic hence he exclusively uses bones and physical strength as well as tools. His stats are generally higher but if he ran out of magic he could easily be killed. The only reason he has the red eye is because he cannot turn it off since it's not His eye despite being able to use it(think a transplanted sharingan from naruto). And interestingly enough horror sans can control other people's bones
