High protein Apple ring pancakes
3-4 apples
1 cup Cottage cheese
1/2 Milk
2 Eggs
3 Maple Syrup
2 tablespoons of coconut oil melted
1 teaspoon Vanilla extract
1 1/4 cup ground oats (oat flour)
1/2 teaspoons Cardamom (substitute for pumpkin spice or omit )
1/2-1 teaspoon Cinnamon
2 teaspoons of baking powder
In a blender , mix your cottage cheese, milk , eggs , maple syrup , coconut oil and extract until you het a smooth mixture.
In a medium bowl, mix the flour, spices and baking powder. Add the liquid mixture and mix well . Core and slice your apples into 1/4 inch discs. If you don’t have an apple corer , use a small round cookie cutter to cut the middle of the apple after you have sliced it .
Heat a frying pan on medium heat . Drop you apple slices into the batter to coat them well . Cook for few minutes on each sides . Enjoy warm with maple syrup.
It’s also delicious cold .
