    TANDOORI TILWALE AALOO
    ( WITHOUT TANDOOR)
    INGREDIENTS
    BABY POTATOES. 250 GRAMS
    WHITE SESAME SEEDS. 2 TO 3 TABLESPOONS
    MUSTARD OIL. 3 TO 4 TABLESPOONS
    RED CHILLI POWDER. 1 TEASPOON
    WHOLE RED CHILLIES. 2
    BAY LEAF. 1
    DHANIA POWDER. 2 TABLESPOONS
    AMCHUR. 1 TEASPOON
    SALT. TO TASTE
    CHANA MASALA. 1/2 TEASPOON
    KASOORI METHI. 1/2 TEASPOON
    ASAFOETIDA. A PINCH
    FEW MINT LEAVES. FOR FLAVOUR
    PROCEDURE
    TAKE MUSTARD OIL IN A KADHAI AND WARM IT UP
    ADD BAY LEAF, WHOLE RED CHILLIES, RED CHILLI POWDER AND LEAVE FOR 3 TO 4 MINUTES TO IMPART A SMOKEY AND TANDOORI FLAVOUR TO THE SABZI . PUT THE FLAME OFF
    THEN LIGHT UP THE FLAME ON LOW
    ADD WHITE SESAME SEEDS, DHANIA POWDER, AMCHUR, KASOORI METHI, CHANA MASALA AND LET THE MASALA COOK SLOWLY FOR FEW SECONDS
    ONCE THE SESAME SEEDS STARTS CRACKLING, ADD THE BOILED POTATOES , AND SALT
    TOSS WELL AND SAUTE THE POTATOES ON LOW HEAT TILL IT DEVELOPS A GOLDEN CRISP LAYER ON ALL SIDES FOR 10 MINUTES
    KEEP TOSSING OCCASIONALLY SO THAT THE POTATOES DON'T BURN
    ONCE DONE SPRINKLE SOME MINT LEAVES ON TOP AND SERVE
