My God! 96 and doesn't look it. And act it. God Bless her. and these grannies and the channel who is recording this for posterity. With the way the world is going, this is a world treasure! Hope the generations to come realize these were the women to admire.. not celebrities and stuff.
I appreciate the mildly terrifying ease with which Rosaria can flatten a pasta sheet to the delicacy of tissue paper. Letting the mushrooms and garlic olive oil speak for themselves is a testament to the quality of ingredients around the village, I think. Besides the pasta I feel that the tradition of nightly bingo is one that that family is going to inherit: it's nice to see folk that get on so well with their relatives that they're happy betting pennies around a casual game.
What a wonderfully cheerful lady. For those who don’t know the image of Mary in the background is Our Lady Of Fatima, she’s always dressed in white and has a heart surrounded by thorns. She’s also known as Our Lady Of The Rosary, thus Rosaria's name Saint. Many Italians celebrate their name Saint.
I believe Rosario is my soul sister…I do not eat tomatoes either! But I love a red pasta sauce, just like her! This dish that Rosario so skillfully brought together looks luscious! Earthy and soul-nourishing. I enjoyed a little giggle when poor Rosario was being teased with a bowl of pasta, but no way to eat it! Her beautiful, smiling eyes shows she loves a good laugh! TFS, Sharon🤗♥️🍝
❤ Every aspect of this video is pure perfection! The breathtaking scenery, Rosaria's lovely home, Rosaria herself, and your narrations are peerless. The pasta looks incredibly delicious. I love mushrooms! Thank you so much, Vicky for this unforgettable journey!! God bless you. 🙏❤😘🍄🍝
Thank-you Vicky for bringing these TREASURES of ITALY, great NONNAS that have so much knowledge and experience of LIFE. Varied traditions of culinary dishes all over this great country. I believe you live now in Italy or at least you got married to an Italian. Grazie mille e buon appetito.
Thank you for these wonderful episodes and the time you and the grannies put in - means so much to see tradition and those that love showing it and those that love receiving the knowledge to carry on 🎉🎉❤❤
Those fresh mushrooms! I love Rosario. She does everything at a relaxed paste and with a smile. The fireplace is delightful and I can only imagine the flavor of the mushrooms while eating them beside the fire. May her daughters be as blessed as Rosario. Great episode, again.
Such a simple dish, no seasonings except salt, one garlic clove and the olive oil used to cook the mushrooms, yet I was drooling watching the vid. The mushrooms were the featured stars, the pasta is the stage and curtain. Of course, if one can get fresh porcini mushrooms like Rosaria used, they have a wonderful earthy flavor which would stand out.
Her ❤❤ secret to. To her longevity is the fresh food in Italy. The air. And the quality of food. Italy doesn’t use fake foods. 🌹🙏🇮🇹. Also they treat citizens with care. Its not a 24/7. Society like Canada 🍁
Oh thank goodness! I just had this meal in Lazio after I was taught to make pasta, and I've been searching for the authentic mushroom sauce... I thought it would be much more complicated, but as simple and good as it tasted, I should have known better.
And then someone abroad says that we Italians use a lot of garlic. This is completely wrong as we also often see in these videos. On the other hand, those who use a lot of garlic, as I have seen in various videos on UA-cam, are the Americans! When they make especially an Italian dish, they think that to be "Italian" they have to fill half a pan with garlic. ;)
There's definitely a lesson for cooks in this... the garlic in these traditional Italian dishes is meant to provide background subtle flavor, not dominate these dishes. As much as I love garlic, obviously sometimes its best to not go overboard.
Hello Elaine, culture, geography and language mostly, but also the flours, use of eggs etc will be different. If the evolution and history of pasta/noodles interests you, check out a book called Pasta: a universal food by Silvano Serventi 🙂🌺 best wishes, Vicky
If I should guess I’d say the non as secrets are simple : a loving family, hard work, good food and good surroundings.. simple things but not for everyone
@@ottawamountainman They might be just using the container for the salt. Remember sugar is an english word. probably means nothing to them .. just a container.
I love how eagle eyed everyone is! I tasted the porcini and she definitely added salt; the Italian for sugar is zucchero, so I think Rosaria has ignored the English words on them. 😁 best wishes, Vicky
As Stefania says, when you have porcini mushrooms this good, you don't need much else! But perhaps you could chop them up more finely to make more a duxelles mixture? 🙂🌺 best wishes, Vicky
@@stefaniasassi433 Fresh porcini mushrooms have a wonderful earthy flavor that is the star of this dish. Adding extra flavorings might cover it up. But there's the taste of the olive oil, the subtle garlic and salt to enhance the mushrooms. If one only has mild cultivated mushrooms to use, I think some extra flavorings might be needed.. a bit more garlic, maybe a finishing sprinkle of grated cheese and some chopped herbs, a few twists of fresh ground pepper.
I love your channel because you allow us to enter Grandma's house, live in their homes, and eat their food❤️
Thank you x
I love having the clock right there behind her--now I know how long it takes to roll out in "real" time! She rolled that for nearly 40 minutes! LOL! ♥

It looks absolutely delicious. So fresh, so simple.
That looks like a wonderful Autumn meal! It always makes me laugh the lengths Italian cooks will go to remove garlic from a finished dish :-)

@@aris1956 we really
do love garlic! Probably why Korean and Chinese food are so popular here

Thank you for all your videos!! ❤
Thank you!
Best channel love the culture

08:12 "c'è nulla forchetta" (There isn't a fork!) - 😂Mi piacciono tutte queste nonne 🙂
It looks so easy when beautiful grannies like Rosaria cut or form the pasta. But its not for "normals" like me ;-)-
love this
I had to pause to take in the magnificence of the shrooms.
This is one on the times I wonder about what differentiates pasta and noodles.

Bravissima nonna
8:08. Ha ragione la mamma….. se mi passate la forchetta……😀
😂
Nice. I like the pace of the cooking. Nelle pui vita -
slow cooking x
Thanks 🫶🏻
What a grand old lady!

E viva le nonne brava❤

Uuuugh I can't even imagine being able to walk out your front door and just forage porcinis.

My nonna did the same

"cocktail stick" instead of "toothpick" is so British and classy lol
No tomatoes? Regional cooking can be peculiar to taste. Mushrooms, however, are wonderful no matter the setting, Great video1
Did she really use a pinch of sugar in the mushrooms? I had to rewind it, but would like to know for sure.
Same here 😂 I think the bucket of salt was in the wrong place… someone staging the scene probably exchanged their location 😂
Yes, probably. I use half a glass of Marsala ( kind of Port wine). And I also stick garlic with a toothpici, only I put 2 or 3 cloves.

What a coincidence. I’m currently eating mushroom tortellini for lunch right now. Unfortunately, it’s the store-bought kind.
Let us know if you'd be trying the recipe!
💙
Wouldn't it be a bit bland without any type of sauce or dressing?
È sufficiente il gusto dei funghi porcini,la salsa o il condimento ne coprirebbero il sapore.
