I think part of what makes the Princess Bride fencing duel so good is that it really leans into that and doesn't even try to seem realistic. Like, the fight is just something that's happening in the background and it's really about the back-and-forth they're having.

As a fencing coach for over 10 years, the fencing blades are "epees" not "foils" in the James Bond bit. The gauntlet of a fencing glove is often closed with velcro and there is a small opening for the body cord (which connects to the epee for scoring) to exit. Blades do occasionally find their way into that hole and draw blood. Bruising, small cuts, and "road rash" are common injuries in sport fencing.
One time when I was just started out, I accidentally thrusted my epee all the way up someone's arm through the hole in their gauntlet. "Halt"(meaning "stop") was called immediately and the ref and I checked on my opponent to make sure he was OK. He was fine; we kept fencing after he closed his gauntlet a little tighter. It happens. Fencing is still statistically one of the safest sports.

In the Star Wars clip, they cut a lot out, but in a 2 v 1 situation, the 2 want to attack in a line with one in front and one in back, while the 1 wants to keep the 2 in front in a triangle, and in the choreography of the entire fight, we see them do just that with the Jedi constantly maneuvering to put one of them behind Darth Maul, and Darth Maul countering by maneuvering so that he puts them both back in front of him. That choreography was absolutely brilliant. probably one of the best choreographed fight scenes in all of Star Wars.

A few HEMA youtubers who do practice sword fighting have reviewed some of the clips in this video and had some different opinions about the bad choices that the fighters make. These clips are rife with hollywood shenanigans that would put you at a disadvantage in a real life scenario,. things like spinning around, making cuts without a hope of connecting, deflecting blows over and over and never following up with counter cuts. Choosing non-lethal attacks when a potential fatal blow is starring at them in the face. (like james bond one where he hits james in the back with the sabers guard instead of stabbing his back?)

I do wish, in the Troy scene she would have talked about how unrealistic it would be to jab the point of your sword straight into the opponents shield like they do. That is a good way to break the point, or at the very least dull and or bend it. They are using Bronze swords so the tip would definitely get bent at the very least hitting into the shield like that. Also, they spend so much of the fight with their shields either at their side or behind them where it will do no good as it can block nothing when it is not between you and your opponents weapon. I find it very irksome when they bother to give the actors shields and then they spend the entire fight with the shield off to the side or holding it behind them.

They are also super human (vampires) with super human strength/speed making the sparks more achievable(assuming the blades are glazing off each other and not cutting into each other).
As far as Star wars, I was never a fan of the fight with Maul. While I appreciate the skill Maul's actor has, the strategy was so sub par IMO for people, who in this universe, are powerful fighters.
