Thanks for another awesome video! I tried making this and the chicken gave the dish a really bad metallic flavor. Does that mean the baking soda was old/bad? The rice ended up pretty mushy too. Seemed easy enough, but what the heck did I do wrong? Haha!! I'll definitely be trying it again.
Make sure the rice is fridge cold. It's best to make it the day before and let it sit in the fridge overnight. The chicken should not have a metallic taste.... I could not guess why that was but yeah, could be the baking soda. Gary who commented above suggested rinsing the chicken after the baking soda step. perhaps this would help? Thanks for taking the time to share your thoughts with us Powers! Griddle on! -N
Next time mix the soy sauce with the cornstarch and meat. 2 TBLS cornstarch to about 2 pounds with all the sauce. It will still flavor the rice. Sorry just couldn't resist saying. Good one guys. Love the fish sauce addition
Hey guys👋🏼For info on using “baking soda as a meat tenderizer”, do a UA-cam search for it…there are plenty of videos on it, including Alton Brown, so you should be able to get the ratios from one of them. I remember seeing an America’s Test Kitchen video that explained it. BTW, love the trucker tan, Chris! 🤪😖🤣
OMG LMAO! hahahahaha LIterally!!! And you know what disturbs me is the one on the opposite end had burned out, I replaced it and then this one went out like a day later! I was like arghhhhh....!!! LOL. I will get to it this week! Thanks for the reminder :D -N
No need to peel the garlic when using that garlic press. The garlic clove will push through the little holes but the peel will not. Then the peel can be quickly removed from the press using the tip of the knife. Makes life easy.
Easy way to peel garlic. Separate the cloves in the head. Place them all in a small metal container with a lid. Shake the daylights out of it for 30 seconds or more as needed. Remove the lid and all the cloves will be peeled including those little pain the arse tiny ones.
Real fried rice No chicken stock No fish sauce No ginger Use light soy I use golden mountain sauce two tablespoons Double dark soy sauce 1table spoon Fry the eggs first Then the minced onion and minced garlic about a tablespoon of garlic chopped not riced 1/2cup chopped onions 3 stacks spring onions Prepping the chicken 1/2teaspoon baking soda 1 egg mix in your chicken let sit 15 min than completely rinse under cold water Pat fry add two tablespoons rice wine 🍶 mix into your chicken Fry your eggs first-remove Fry chicken-remove Fry your onions Add your rice onto your flat top Add carrots and peas Add light soy and double dark soy sauce Mix everything well 1/4 teaspoon white pepper mix well Done Add extra golden mountain sauce to taste I like magnificent sauce to taste a few drops goes a long way Add bean sprouts if you like 👍 GaryDemarco Ohio
Sorry for the delay in replying Vic. Been a busy summer! Your channel def has a ton of good info on it. We are sub'd! Cook on bud! You giving any consideration to adding a griddle to your repertoire? :-D -N
I always add mushrooms to my fried rice.....I also love adding a couple handfuls of coleslaw mix as it's almost done. It gives it a terrific little bit of a crunch.
Keep up the good work Jeff love the different ideas on eating differently. Nate good recipe for the sauce and the cook on the that redone camp chef griddle. Chris, I agree I would have put a hurt an on the fried rice. Jeff thank-you for being the example that you don't have to eat everything that our friends make. To the friends thanks for the understanding of what Jeff and his bride are trying to do. God bless. Cheers to all.
Hi Rob! Thanks so much for all the kind words! Very thoughtful and articulate comment! Jeff has done great on his diet, at first I gave him a hard time but after seeing all his hard work,,,, yah... gotta give it to him and I have to be understanding about his strictness. Griddle on Rob! -N
What the what! Italians making Chinese food… Forget about it…Just joking! This is one of my favorite things to cook on my Blackstone. Not only because it taste great, but it makes me look like I really know what I’m doing on a huge flat top.🤣 it all looked absolutely delicious but I would like to add sesame seed oil. This gives it that take out flavor. But that is just my opinion! As always I enjoy watching you three cut up and cook!👊🏻👍🏼🍻😋
Funny you mention the sesame oil. And I have to agree, your right. That is legit and most other folks would.... I hate to say it but personally I just don't like sesame oil. Its not for me so I left if out. Good catch on your part Bearded! Thanks for watching and for commenting! Griddle on bud! -N
Love it! BTW, was the green snow in March? Looks great! I do this all the time, but use medium or short grain rice, and smoke chicken thighs for the chicken portion. Mixed cooking mediums are game changers! Griddle on Guys!
Outstanding cook as always, gentlemen. You always do a great job explaining the process and why certain things are done the way they are. Excellent video! 💯 Sidebar, that is an impressive garlic press! 😆
One of my favorites. Nice cook guys. I hate when I go to a restaurant, get and taste your food and you know you can do better at home. Here in Houston Texas, I have not found a good fried rice. Yours looked awesome and I'm sure it tasted great. Thanks for the video and GEIDDLE ON DUDES.
THIS LOOK SO GOOD now I am craving stir-fried rice. However I use a short cut With Uncle Ben's precooked long grain rice as it is pantry stable. So any time I have a hankering to make fried rice, it is there and ready to use. I keep several packages on time on hand each package is about 1¾ cups of rice. To use this in a stirfry rice: You don't have to microwave it (as tha package instructions say) just dump the rice on the griddle or in wok and cook with as you would day old rice. Avoila in less than thirty minutes from velting the meat to finished dish. Nate I agree the cutting of the soy sauce with water is good idea thus allowing those that like more soy sauce they can add it up on serving. I sometimes use oyster and hoisin sauce sometimes as variation to fish sauce. A splash of rice wine vinegar adds a little tanginess to the flavor profile. That is what I like about fried rice make your own as there is not and exact flavor profile and use what you have. No meat make it vegetables and eggs and I agree with Chris add mushroom as makes for a good substitute meat, especially with meat prices rising ever day. You can add some umami powder to increase the meaty flavor. Or even use a yeast extract to increase the flavor profile. I have also added grilled/griddled peaches or pineapple cooked then diced then added to fried rice, it add a touch of sweetness to the savory and salty flavors of stir fry
I love making fried rice on my Blackstone. Yours looked fantastic guys. I am so gonna put mushrooms in my next fried rice recipe. Hey Nate, I love the bean sprouts crispy too. Great video guys 👍👍
If I ever get a mushroom in my fried rice I'm going to be very disappointed, I'll still eat it but the anger level will go from a solid 1 to a 3 or so.
Thx guys!
I started cooking in butter instead of oil, OH MY, so much better. Just made it tonight on my Blackstone
Interesting idea! and I LIKE IT! Will give it a shot next time! LOL. Griddle on outdoors! -N

Funny Chris, I just introduced Jean to Uncle Roger videos last week. I hope Uncle Roger finds this video. Where your MSG???
If you use a garlic press, there is no need to get the outer husk off! Just break of the cloves and press those mfers and the husk will stay behind!
You're the second person to say this....I'm starting to believe it and look forward to trying it! Thanks for the tip Micah! - C
