@@ketotwins do you have to put the chips in the fridge because the base is cottage cheese, and if not how long do you think they would last ?
@@lisaharold8364they are dry. Same as if you take any fridge required food and dehydrate it. Once dried they should be shelf stable.
I would keep them in the fridge, but we eat them right away so I’m not sure!

Not only that, but there are some channels where everything that they cook is “so delicious” and you know that it’s not, I just think these guys here are the twins are really honest
The spice aisle in many stores have nice assortments of seasoning mixes in jars. I stir Frank’s Red Hot Buffalo seasoning in the cottage cheese before baking. Also, near the popcorn, there are often jars of dry seasoning mixes like sour cream & chives, jalapeño & cheese, etc. I found it hard to get seasonings to stick to the chips after baking. I blend the whole cottage cheese container with seasonings and the instant mashed potato then store it in the fridge so it’s ready to use.
I tried your recipe. However I placed 1/2 tab dabs on a piece of parchment paper cut to the size of the glass plate in the microwave. I then placed a piece of pepperoni on each dab pressing down a bit. I microwaved them for 6:30 minutes. Checking every minute or so. Wonderful!
Tsp not tab.
So even if you binge and eat half rather than a quarter of the whole amount, it would still come to only 6 net grams of carbs. Amazing!
Don't let the Keto Police deter you. I use a little real mashed potatoes in my cauliflower mash, and I love love love that recipe. So much so that I printed it out and saved it to my drive, so I never lose it, lol. Those chips look fabulous, thanks for your hard work in creating this recipe.

Mashed Cauliflower
4 servings, about 8g net carbs per serving. 6 smaller servings, about 5g net carbs
1 pound fresh cauliflower florets, with the little stalks (about 1 medium head) (12.74g net carbs)
2 Tbsp mashed potato flakes (14g) (I used Idahoan Buttery Homestyle) (9.5g net carbs) (optional)
½ cup shredded parmesan, or 2 oz cream cheese
1 Tbsp heavy cream, buttermilk, or sour cream for the loaded version
1 Tbsp olive oil, bacon grease, or softened butter (not margarine)
20 drops potato extract (optional)
Salt and ground black pepper to taste
1. Place cauliflower in steamer, with the biggest pieces on the bottom. Add a packet of chicken bullion to the steam water. Steam until soft, about 20 minutes. Carefully lift out the steamer basket, and pour the cauliflower into a colander which is placed over a bowl. Drain well, reserving the remaining cooking liquid.
2. Saute and mash the steamed cauliflower with a potato masher over medium heat in a dry, nonstick pan for about 5 minutes, until dry, but not browned. Watch carefully. Cauliflower will stop steaming when dry.
3. Transfer cauliflower to the bowl of a food processor. Add parmesan or cream cheese, optional mashed potato flakes, cream, butter, and potato extract; pulse and run until cauliflower mixture is smooth and fluffy, stopping to scrape down the sides. Remove to a bowl and season with salt and black pepper.
4. Top with chopped herbs, chives, green onions or chopped crispy bacon if you wish.
Try roasting cauliflower instead of steaming, without oil. If boiling, add 1 or 2 cups of beef bone broth and a tbsp of tallow to the water that you're boiling the cauliflower in, to give a better potato flavor.
Try using 2-4 Tbsps Dixie Carb Counters Instant Mashers in place of mashed potato flakes for a net carb count of 1 carb per Tbsp.
Save the stalk and leftover cooking liquid to make Loaded Cauliflower Chowder.
Try adding ¼ t garlic powder, chopped fresh chives, or ranch seasoning or dressing, and a lot of freshly ground black pepper.
Serve with roasted fresh green beans or roasted baby Brussels sprouts.
Top with diced green onions or chives, and sprinkle with more shredded cheese.
¼ cup Idahoan plain mashed potato flakes is 12g net carbs. /4=3g /6=2g each serving, for around 6 net carbs per serving for 4 servings, or 6 servings for 4 net carbs
Try tossing with the olive oil and roasting fresh green beans, cauliflower florets and garlic on one pan, then make mash with the roasted cauliflower.

What about adding Mashed Potato extract? (e.g OOOFlavors brand) to boost the potato flavor without adding more flakes/carbs?
I actually add a small amount of potato flakes to our mashed cauliflower, along with a little cream cheese or sour cream. The flakes really help thicken the mashed cauliflower, mute some of the cauli flafor, and add only a small amount of net carbs per serving 😊

Went out and bought Idahoan Instant Mashed Potato both regular and sour cream and onion. SUCCESS AND LEARNINGS
The first small batch I did not blend enough and there were some lumps. Also, i spread them too thin, and they were paper thin and had little taste. second small batch blended much more thoroughly, added full Tbs of sour cream and onion Idahoan flakes, also added 3 drops mashed potato concentrate liquid from OOO and made the chips a bit thicker. I brushed the pan silicone liner with a thin layer of olive oil to get more of a fried feel vs baked wow yippee yay yahoo. Thanks for leading the way

Can’t thank you enough for working this recipe out. I’ve been on keto for years and every once in awhile I completely lose it and buy a bag of chips from Costco and then regret all that frankenfood oil they use to fry them. Your version of chips may be a lifesaver.
I had the same problem! There just wasn't anything chippy & crunchy enough out there besides "the real thing". These are just fine!!! Bonus is the protein and low net carbs. I could never eat as many of these chips as I could potato chips - they are filling because they are real food!

I tried the original and failed. Technique improved in microwave, but this is the best version. All of your suggestions in this video are correct. My second batch was easier to spread because of the hot pan and more room temperature mixture. Based on that I will experiment with preheating tray and silicone mat. Made 35 chips. So I will work on improving portions.
I wonder if you could add potato flakes to the Heavenly Fans French Fries recipe.

Suggestion...you can make your own dehydrated potato flakes or powder simply by using a slap chopper and dicing up potatoes then dehydrating potatoes and grinding potatoes up into a fine powder.

If you purée raw potato with water, you can use a nut milk bag to remove all the water and starch. Pulp left in the bag will be high fibre and low carb but still gives a nice potato flovour.
How do you use this product in recipes?
@@patriciahogg5763 mostly use it instead of almond or coconut flour. Absorbs a fair bit of water so it can dry out a batter if it’s runny.
I’ve been doing this since I found your original version! I only use cottage cheese and a tiny bit of potato flakes and microwave them using Walmart store brand cottage cheese. I’ll have to do the oven version so I can make more at once.

I do the same after the other video you did but I started adding a little ricotta and love the texture. I've only done them in the Microwave, will try doing them in the oven. I sometimes make them large and make a big tostada out of them yumm. Also, if you make a big batch they will stay in your fridge for a few days and keep the crunchiness. Thanks guys :)

I’ve tried your recipe pre mashed potatoes and found it really good. Of all the food in the World ,I miss chips the most!😢 I’ll admit that I’ve caved in once in awhile. I’ll have a 1/4 cup of lf cottage cheese with a pinch of onion dip mix with a few nacho chips mashed into it. But only on days when I’ve decided to keep my carb intake below 15 g. This method will definitely be a game changer. Going to try it with the nacho cheese dust! Thanks sisters.

My sister and I did a test batch last night and put them in the fridge. They stayed pretty crispy in the fridge so that is an unexpected bonus so that means we can bake a bunch a head of time!

I totally use mine constantly now that I got one a year ago. Who knew how much simpler it would make cooking and blending?
We’ve had an immersion blender for years and only started using it now lol it’s a great tool!

For one ingredient just froth egg whites. Add just a little in a muffin tin. They turn out crunchy!! You can add any flavor sprinkled on top. It must be the airy bubbly part more than the liquid part

I love watching you ladies! Since you are casual keto, there is a product called cassava strips that are my crisp, slightly salty chip go to. They are in a purple bag and Whole Foods sells them. These cassava strips are a life saver. I don’t eat any bread and I can’t tell you how important these chips are to me. Keto is getting easier with grain free crackers as well. I am so grateful after about 4 years on this journey that I don’t have to miss out or prepare everything I eat. Thank you ladies

Well done, Ladies. These are definitely really good. Next time you make them, I want you to reserve half your batter and try adding a couple tablespoons of grated (powdered) parmesan cheese and let me know what you think. I believe all grated parm has 0 carbs but check your labels. Baking time was a bit longer with the parmesan, but the chips were a little thicker, sturdier and a bit saltier.
I’m not keto, but I was thinking Parmesan would be a good addition to these chips as well while watching the video.
@@NS-ie2ld Oh, it is definitely a good addition. From now on, that's how I will make them. Delish! Though I think the chips taste better salted too. I salted mine just before baking.

Walmart - lavash breads, (large rectangular flat bread) cut into 32 pieces is 3 pieces per carb. Cut with pizza cutter to chip sizes, and put back in bag. Shake with coconut oil and seasoning of choice (everything but the bagel, or keto cinnamon and sugar, work really well) bake low and watch like a hawk. They over cook easy

I tried this recipe and then tried it again only with a flavored mashed potato. I used a sour cream and onion, and there was a slight difference in taste, still wonderful. Thank you for the recipe.

Oh Yay. I am so gonna try this one. I was not a fan of cooking them in the microwave because it took so much more time. I did try with the potato flakes and yes it makes them so much better. I used Daisy Cottage Cheese too 🙂
