This recipe is amazing. After discovering this nut roast, a few years back. I've made it every year. If time is a factor, I make it up before and freeze in the cooking dish. Then defrost on the morning of baking the nut roast. Plus, it makes great veggie patties for burger night. Totally delicious.
That's such a nice recipe in itself!!! The flavors must be out of this world! For the vegans out there, here's a few tips; forget the butter, just go with the olive oil. Replace the eggs with this mixture: let some flax seed sit in warm water for 15-20 min and it will turn into a gelatine like mixture, which is going to work amazing for the bonding effet the eggs usually provide! ;) Skip the cheese altogether or go with vegan cheese. Wallah!
Grind the flax seed to a powder & it will become gelatinous w/ the water even faster. 1 tablespoon ground flax with 2 1/2 tablespoons of water. Whisk well. This will equal 1 large egg. If too thick add 1/2-1 teaspoon more of water. ‘Golden’ flax seeds are milder than the dark ones I have tried. I have used this “flax egg” successfully countless times for baking anything that calls for traditional eggs.
I did actually make this over Christmas. It looked fantastic. Unlike other roasts I have made it held together in good meaty slices and did not embarassingly disintegrate at the dinner table. I had hoped for an explosion of flavours given all the wonderful ingredients. However there were so many flavours and textures that they did seem to cancel each other out and the resulting taste was a bit bland. That said it tasted better next day cold with mango chutney and salad. If I made it again I would dispense with the spicy sauce ..that just masked any taste that was in the roast.
I'm not particularly passionate about cooking but I love watching Jamie's videos he's so genuine and fun to watch, and he makes cooking look so appealing :)
The smell of that coming out of the oven must have been mouth watering! I think even hard core meat eaters would want to take a bite and the look of it resembles a proper meatloaf. No need for vegetarians to get something boring at your holiday gatherings with this baby. Jamie has you covered. Nice!

I'm thinking of trying this vegan, with a flax seed mixture as a egg replacement for starters. I assume you (Jamie) aren't entirely familiar with vegan cooking, but do you think that would work alone, or should I do some sort of applesauce combo as well?
I made this for xmas 2016 and I must say I was very skeptical about how it will taste. But it was amazingly delicious. I am going to make it again tomorrow only thing I will tweak is the sauce as it was a bit over powering and bitter. I had to add some brown sugar to make it bearable. I will use one tin instead and blend the sauce. Otherwise this meal is super delicious vegetarian meal.

Yeh i used flaxseed + water. It worked well enough. Now there's vegan egg around, I think that may bind it better :).
Which kind of cheese did you use?
I think I used violife. Any vegan cheese that melts well is good. So many options these days! just put your favourite on :)
