I MADE THIS RECIPE! Can confirm that it’s delicious. I was too scared to use the full amount of the thai paste but next time I will, because it needed it. Also, dont skip the lemon either! such a great addition. Thank you Laura!!!!
Okay I just made this- so good! I used ground beef instead of chicken and didn’t form meatballs, I just left the beef chunky. Also I added mushrooms carrots and zucchini. Omg it’s so good!! Thanks for this recipe!

I made this tonight and the sauce was delicious and easy to make. We ate it with sticky rice and a pack of frozen Asian vegetables. I used the 2 tablespoons of Thai Kitchen red curry paste. It was perfect for me and really had no heat, but my family likes it spicy so next time I will use 3 Tbs. The meatballs were ok but were not a hit with us-we would prefer them with a little more flavor. Next time I make this I will use shrimp or mahi mahi instead. Thank you for this recipe, Laura. We really enjoyed our dinner! Tomorrow night I am going to make your version of Gigi Hadid pasta.

Hi I enjoy your show. Just a note that if you like any type of Asian curry with sauce, you should keep a lid closed while cooking the sauce with meat and vegetables. I’m Asian and cook curry from time to time myself, and I know of quite authentic curry of different types as I live in Asia and ingredients are readily available to me. We don’t cook meat balls though in curry though it’s usually fresh meat. That amount of coconut milk you added to what you have at the end, we normally have a lot more sauce. You should also cook in a pot and not a pan to keep more juice to eat with rice. It’s supposed to be a little more sauce in there.. I think the meat balls are unique and looks a bit more like Italian curry ;) I’ll try it out for more mixed fusion type.

Mrs. Laura, very nice recipe, being a 56 yr. old irishman, i am not familiar with cooking Thai food or using curry spice powder , as also used in food from India, i'd like to try it. As respectfully as i can ask this, i have been told that curry runs right through your system( digestive tract), is that true ?.
I think it depends on the person. I tend to have a sensitive stomach but I’m fine with almost all curries I’ve tried. Green, yellow, massaman, and red. I think that the ginger in the curry is great for your stomach and the herbs and spices also have a lot of health benefits. I would just try to find one that’s milder as the peppers are going to be what may inflame your stomach more.
Coconut milk is more creamy than reg milk. I think you can use heavy cream as the supplement. But if you don't like your curry to be that creamy, then go ahead with reg milk.
