    Even as a retired organic farmer, this series is way fun and informative. It would be really great for kids who didn't grow up on a farm!!

    Tip for making mashed potatoes. At around 4:29 the video notes how boiled potatoes lose a lot of their nutrients. One option to lessen the effects of this is to use the water you boiled them in as the water needed when mixing the other ingredients. You will gain back some of the nutrients lost, and you will gain back some of the dissolved potatoes in the "potato water". This is especially ideal if you are combining fresh potatoes with an instant potato mix.

      Why would you combine those two? It’s like putting a McDonald’s burger on a platter with fresh grass fed beef burgers. They don’t mix

      @@lizi.2503 The same reason you would add seasoning to a jar of Prego spaghetti sauce. It's a quick and convenient base to use so that you don't have to make everything from scratch, cause fresh potatoes takes a lot of prep time/work when feeding a large group.

    I took a tour of the Herr factory when I was a kid, and wrote a little kid hand written note to the older Mr. Herr, and he wrote a handwritten note back! The Herr family is so kind and their business is so important to Southeastern PA.
    I have to admit I'm addicted to your videos, but not only because they remind me of home. They're informative and make a sometimes boring topic really interesting. Thanks for making the videos!

    Love these videos! Here is some thing I bet you did not know. If you cut potatoes in to thin slices and put them in a dehydrator for 24 hours. As long as you keep them in a sealed jar they will last for ever. Just the other week I re hydrated a jar full that was made for a Camping trip in the Boreal forest back in 1993. It was just like super fresh raw potato. We boiled them and made mashed potato and cheese and tasted amazing.

    I like potatoes boiled and topped with butter and garlic salt. Red skin, golden, and blue varieties are all good! But I’ll have to try the bake and smashed version sometime, sounds good too.

    I pretty much stopped boiling potatoes except for when I make mashed. I steam them now, and they seem so much more sweet. I'd recommend trying it. I steam nearly all my veggies now.

    I cook my potatoes the same exact way. Smashed potatoes are the best drizzled with extra virgin olive oil, kosher salt, pepper, garlic & rosemary or thyme. My mom has been cooking them that way for us for years, but both of us never knew they kept that much of their nutrients. Guess we been doing good all this long. That's great!!!

    I grew potatoes for the first time last summer, only a doz plants, new and russet. I wonder what those little green “berries” were on the plant at the end of the season. I should’ve saved a few, to try and see what they would’ve produced! Love you videos!

      Alazar Assefa it's not air, its nitrogen that preserves the chips. Without it, you'd have rotten chips. Be grateful

The fields are always a natural setup that pleases anyones view...By then having your dream kitchen you could extend the content of trufood vids....i know you are happiest sharing what you harvested from the fields and cooking them in a nice kitchen...wish i could create you oneO:)

    Not many people know about the green potato poisons and I am glad you mentioned it in this video. For people with liver or kidney disease green potatoes and overwork their already stressed system and it is very important for these people to know of any form of metabolized poisons they are ingesting.

    Potatoes are so awesome and such a hardy crop.
    I let a store bought spud sprout once.
    I cut it in half and planted it into a medium pot and, in a month, I couldn't believe I had an actual potato crop growing!
    That is, until my dog (bless his pure little heart), decided fetch would be a lot more fun with the new green thing on the picnic table.
    Nbd though, I got another going last week. I can't believe how easy it is (speaking from a pleb standpoint who is only growing one plant) are to grow.

    1/50,000th of an inch sounds awful thin. I'd be willing to bet they're more along the lines 50 thousandths of an inch.
    1/50,000th is 0.00002"
    A sheet of paper is 0.00300"

      You already said 20 slices per inch. That is the same as 50 thousandths. 20*50 = 1000. A thousand thousandths of an inch is just one inch.

      Yeah, that math had me scratching my head. If it was 1/50000ths of an inch, wouldn't we be getting 50000 chips/in.?

    The native farmers in Chile used to plant 150 different types of potato every year.
    Depending on the harsh weather the harvest would always provide food.
    Many varieties means food security if there are problems.

    potatoes are my favorite vegetable!! and i tend to center my entire diet around them. i'm vegan, and potatoes are my starch of choice, mmmmmmm. have you ever tried japanese sweet potatoes? they're my fav!

    Hi there! Just a suggestion for another video: cabbage. More specifically fermented cabbage. It is quite universal and is seen as Kimchee, Sauerkraut, Choucroute and probably some other variations as well. I think a video that explains not only the growing of cabbage but also the process of fermentation and storage would have a broad appeal, as there are many rich traditions behind it. You channel is great and it is interesting to hear how your spoken English is a mix of American and British English!

    Lol im still learning to get the best yield from my potato plants. This year i planted them all over my garden and in raised beds too. I actually planted two 3rds of my garden with potato plants. I need to learn the watering properly. Experimenting with growing in mounds and swales next to it for watering down deep. So roots go deep but the potatoes grows on top in the mound. This way the potatoes dont rot and it gets more hard for storage. Im also going to try to stop watering them 2 weeks before harvesting. Then i want to also try to see what is the best way to harden them and dry them for storage. Growing potatoes has its challenges to get them perfect.

    My biggest potato pest is the tortoise beetle. They're not supposed to do much damage, but their larva completely defoliated my entire potato bed. I will never again underestimate their damage potential.

    BTW, by introducing the origin and spreading process of each crop, you let audiences know that different peoples on different continents contribute to our modern food and civilization. This promotes appreciation of each other among peoples around the world if every kid on this planet is informed of these facts.     Great. Thank you. I planted potatoes from the grocery this year on my balcony. I am looking forward to what is going to happen. You can make chips yourself very easy and surprisingly fast. It’s a little work but you have two benefits. 1. you don‘t eat so much of them, because the time you are making them is before you start eating them. So the addictive function of eating chips isn’t active yet. 2. They taste A LOT better. I don’t know if it is psychological, but my senses tell me a fat NO.
    It takes a little practice, but it is nice to make a portion of nice chips for the evening.
