  • Mary Berry's Fondant Fancies was the final technical challenge in The Great British Bake Off (GBBO) Season 3. Surprise your friends (and indeed yourself) with a batch of these homemade fondant fancies. Plus there’s plenty of fun to be had choosing your own colours and flavours.
    Equipment and Preparation: You will need a piping bag, free-standing mixer and a 20cm/8in square tin.

    GBBO S03E10 - Final week - Mary Berry's Fondant Fancies
    GBBO Brief:
    [Sue] What we're asking you to do is to make and ice 25 fondant fancies. Proper artisan, beautifully done, fondant fancies. You need a square of delicate light sponge, a dome of buttercream... all encased in a glossy fondant.
    [Mel] All the very best. This is your last technical challenge.
    [Mel, Sue] On your marks... Get set... Bake.
    Ingredients - For the sponge
    ----------------------------
    Self-raising flour - 225g / 8oz
    Baking spread or softened butter - 225g / 8oz
    Caster sugar - 225g / 8oz
    Grated rind only - 1 lemon
    Free-range eggs - 4
    For the buttercream
    -------------------
    Unsalted butter, softened - 250g / 9oz
    Icing sugar - 200g / 7oz
    For the marzipan topping
    ------------------------
    Apricot jam - 3 tbsp
    Marzipan - 200g / 7oz
    For the icing and decoration
    ----------------------------
    White fondant icing - 1 kg / 2lb 4oz
    Water - 150ml / 5fl oz
    Dark chocolate - 100g/3½oz
    food colouring (any colour)
    flavouring (any flavouring)
