- Quick: When does dinner feel like a present? When it's wrapped up in paper! No, I'm not talking about fast food. I'm going to show how to cook salmon and veggies in parchment paper-or en papillote, as the French say. It's both elegant and practical-and definitely easier than you think.
Sarah's Tip of the Day:
You can make as many or as few packets as you like. Just slice up some shallots, lemon, zucchini, and fresh dill or other herbs. Make a bed of veggies and some butter on parchment paper, top with a salmon fillet, and squeeze some lemon juice over. Fold the edges up tight. Bake the packets until they puff up and the fish is cooked through. Let everyone cut or tear into their packets at the table-that's part of the fun!

Total Time: 30 minutes
Serves 1
Ingredients:
1 small zucchini, halved lengthwise and thinly sliced
1 shallot, thinly sliced
1 tablespoon butter, cut into pieces
1/4 teaspoon dried dill weed
1 lemon slice, halved, plus 2 teaspoons fresh lemon juice
coarse salt and ground pepper
1 skinless salmon fillet (6 to 8 ounces)
Directions:
Preheat oven to 350 degrees. Fold a large piece of parchment paper (about 15 by 16 inches) in half to crease it; open, and lay it flat.
On one side of crease, mound zucchini; top with shallot, butter, dill, and lemon slices. Season with salt and pepper. Place salmon on top; drizzle with lemon juice, and season with salt and pepper.
To close, fold parchment over salmon; make small overlapping pleats to seal the open sides and create a half-moon-shaped packet. Place on a rimmed baking sheet; bake until salmon is opaque throughout, 15 to 17 minutes. Serve (see note).
Cook's Note:
Two Ways to Serve: You can either place the packet on a plate and cut it open, or make a slit in the paper and use a large metal spatula to transfer the contents to a serving plate.

I made this tonight and sheesh! This was amazing! My husband doesn't EVER order salmon unless it's sushi. He doesn't like that fishy taste of cooked salmon but tonight, he ate it. He LOVED it! Thank you so much Sarah!

Thank you for this demonstration. When I cook salmon it is either underdone or overdone, mostly overdone because I do not want raw fish. I am going to try this method as it looks like I may not have the underdone/overdone problem. Love your videos.
I just made this for the first time, using olive oil instead of butter, and it turned out well. I did have to cook it significantly longer than the 15-17 minutes though, but my salmon was a bit bigger.

I tried this technique and followed the recipe. I used steelhead that we caught ourselves on the Cowlitz River yesterday, so it was super fresh. I was real crazy about all the lemon. I'm wondering if I just used too much. Other than that, it was pretty good. I really love the technique.

most of our recipes allow people to salt to their own taste. I use kosher salt which is about half the saltiness of "regular" or fine salt....thanks for watching and being a fan! xs
I have made this many times... Just so good.. BUT, for those of us not having pre cut parchment,,, sigh... parchment is a pain in the rear.. However, I do this as shown, but also with asparagus etc... thanks Sara you opened up a new way of cooling for me, way back when this first ran
yeah, the paper is a pain. I just cut it earlier and weight it down. The only pre cut stuff I could find are 500 sheets.... no I would be dead before used them all
I tried this recipe and technique with Dory and Italian herbs... Still came out bomb.com. super delicious!! *Don't skip the butter!

How do you prevent it from leaking liquid?
I made basically the same thing on sunday except I used different veggies and a soy sauce sauce
