核桃蔓越莓麵包 ~ Walnut Cranberry Bread

  • 食材:
    高筋麵粉 200g
    冰牛奶 120g
    有機蔗糖 20g
    無鹽奶油 10g
    酵母 3g
    鹽 2g
    核桃 40g
    蔓越莓 40g
    紅酒 15g
    Ingredients:
    Bread flour 200g
    Cold milk 120g
    Organic cane sugar 20g
    Unsalted butter 10g
    Yeast 3g
    Salt 2g
    Walnuts 40g
    Cranberry 40g
    Red wine 15g
    準備工作:
    1.將蔓越莓加入紅酒中浸泡,放入冰箱過夜。
    2.沒有紅酒的朋友不用特別選購紅酒,也可以買小瓶的蘭姆酒代替。
    3.烤箱預熱160度,因各家烤箱品牌不同,所以溫度穩定性會有些許差異,請自行斟酌調整。
    Preparation:
    1. Soak the cranberries in red wine and place them in the refrigerator overnight.
    2. If you don't have red wine, you do not need to buy red wine especially. You can buy a small bottle of rum instead.
    3. Preheat the oven to 160 degrees. Due to the different brands of ovens, the temperature will be slightly different. Please adjust at your own discretion.
    步驟如下:
    1.在電動攪拌盆中放入高粉、酵母粉、糖、冰牛奶,先攪拌一下,再放入鹽攪拌均勻,最後放入奶油,繼續攪拌成糰。
    2.將核桃及浸泡過夜的蔓越莓加入麵糰中。
    3.取出麵糰,可以用手沾少許高粉,將其整型成圓形,蓋上蓋子,進行第一次發酵30分鐘。
    4.時間到將麵糰取出,整型後繼績發酵30分鐘。
    5.發酵完成之後,將麵糰取出,分割成三個等份,每份約150g左右,放入容器中休息10分鐘。
    6.取一個麵糰用手整型成橢圓形,底部要確實收緊,方法如影片所示,放入烤箱中再次發酵30分鐘,天氣比較冷時,可以放一杯熱水以保持烤箱內的溼度。
    7.將麵糰放在烤盤上,噴水、灑上高粉,進行表面的切割,再放入已預熱完成的烤箱中,烘烤20分鐘。
    8.中間可以將烤盤對調,使麵包均勻受熱,這時候紅酒的香味將會充滿整個廚房。
    9.取出麵包放在架上冷卻。
    10.請享用。
    Steps:
    1. Put bread flour, yeast powder, sugar, and ice milk in the mixer. Stir first before adding salt. Then continue to stir to form a dough.
    2. Next, add walnuts and overnight soaked cranberries to the dough.
    3. Take out the dough and shape it into a circle, as shown in the video. Then let it ferment for 30 minutes.
    4. When the time is up, reshape the dough and let it ferment a second time for 30 minutes.
    5. Afterwards, take out the dough and divide it into three equal parts, each about 150g. Then let it rest for 10 minutes.
    6. Take a piece of dough and shape it into an oval. Make sure to tighten the bottom of the bread, as shown in the video. Put it in the oven to ferment for 30 minutes. If the weather is cold, you can put a cup of hot water in the oven.
    7. Put the dough on the baking tray, spray some water, and sprinkle some bread flour. Put it into the preheated oven and bake for 20 minutes.
    8. You can switch the baking pan 10 minutes in to make the bread evenly heated.
    9. Take out the bread and let it cool on a rack.

    備註:
    如果沒有當天食用完畢,可以放入冰箱保存,第二天從冰箱取出,在烤箱裏稍微烘烤一下,和剛出爐時一樣好吃😋
