This looks so good 👍🏼 My MIL is from El Salvador she uses the same mix of veggies but for a quick fix she will just use a jalapeño can and pour the juice that’s in that in the mix. It’s so good and spicy. Some times she will just buy a bag of coleslaw and a jalapeño can and it’s just the same.
In my house, I learned to put the cabbage and veggies to soften with hot water (soak for 10 mins or so), or with salt (half a cup for a large half of a cabbage head, let stand for half an hr, then rinse) to speed up the pickling. Then add the vinegar and water mixture as shown. Don't add salt if you did the salt maceration though. I store mine in quart mason jars and add peppers to some, extra onions to another. Choice is the spice of life! 😄 They're best if eaten within a month.

I’m dating a real swell guy who’s half Salvadorian and he loves papusas! I’m making this and pickling it for the next day for when I make the papusas. He’s vegetarian so I’m making my own mushroom based papusas so I’m excited for him to try it! It’ll be the fifth time I’ve cooked for him and so far he’s loved everything! Fingers crossed! This was such an easy to follow video and I’ll definitely be subscribing!

Tip: Mama's recipe calls for Mexican Oregano (aka Oregano Cimarron - wild oregano). Mexican Oregano (Lippia graveolens) is not related to European oregano (Origanum vulgare). They have a similar taste but Mexican Oregano is stronger. If you use European oregano it will start tasting like a Mediterranean dish because the flavor is similar, not the same.
Combine, 1 pound or 1 &1/2 shredded cabbage, thinly sliced small or 1/2 medium red onion, 2 medium shredded carrots, 2 teaspoons of oregano. Boil 2 cups of water w/ teaspoon salt add 1/3 cup preferably white or apple cider vinegar when it gets to rolling boil, remove from heat. Pour that solution over the cabbage mixture. Preferably into a glass bowl and cover it. Leave on counter covered for atleast 6 hours or preferably day before.
This is so good with Pupusas 🫓 😢. I’m not Salvadoran but I had a friend who was and I was always over his house and I love Salvadoran food so much I moved away long time ago and miss the food. I live in the Midwest no Salvadoran restaurant out here 😢😢😢😢

You can add all sorts of veggies to this, just make sure they're either thinly sliced or in small pieces. My 2 brothers like curtido with sliced jalapenos and thin slices of carrots, instead of having them shredded.
Is this similar to the pickled cabbage mixture you get with some Mexican restaurants? I love that stuff and have always wanted to learn how to make it. Most of the time there is also jalapeños though.
My problem with curtido is that i just live eating it on its own. So i have to make extra so thered enough left over for pupusas. I even used this to put on top of dorado tacos. Ill either eat a bunch on its own or just put it on everything i eat 😂
