Thanks! I just carry the trays to the kitchen to package, but the kitchen is in the next room to where the freeze dryer is. Retired at 40 showed a hack recommended to him if you have a food saver type machine. You would make a sleeve that fits the tray and then seal one end. Then you snip off a diagonal from the sealed end to the side (pre-sealed side) and then you can pour the contents of the tray nicely in the mason jar.
When rings are secured on canned goods, it can be hard to spot a false seal. The lid can come unsealed, but the ring is there to hold it on, so it’s not obvious. Perhaps more importantly, I have seen people share pictures of jars exploding when the contents somehow got bacteria in it. Without a ring, the lid would simply pop off. With a ring forcing the lid to stay on, the pressure created by the “fizz” of the bacteria caused the jar to explode. While I don’t store rings on my jars, I do think it’s fine to do so if the ring is placed very loosely - like it’s just sitting there on top of the lid, but not screwed on.
