Mexican Rice - The original recipe can be found here thehiddenveggi... I cooked mine in the Instant Pot but the original recipe was cooked on the stove top. I left out the oil, used brown rice instead of basmati rice and added mushrooms and bell peppers.
I have 2 sizes of Instant Pots and I love them both. I got my first in 2016 and never looked back. I have 4 of them now.
The one I use for dinner tonight was my 6 qt amzn.to/4hcsDFJ we use it most to steam potatoes, make broth and batches of yogurt/sour cream. I don't cook as much whole meals in it but I am wanting to do more like tonights dinner. Was so easy. So will be trying other recipes with it soon.
The one I use the most for cooking rice is my 3qt. I use it almost daily. amzn.to/40xDpPx I recommend getting a couple of the non stick pots to go in it. They are wonderful and having a spare is really helpful if you cook a lot. amzn.to/42smEYR They make getting things like stick rice out of the pot a breeze.
