    There is only one major difference between preparing friend rice with white or brown rice and that is that brown rice takes longer to cook before it can be used.

    Lau Papa used the term "to wake up the (brown) rice" to describe the 10 minute soak in keep warm mode before the cook. Cantonese is so cool!

      Nice catch. "Wake" or "perk" up the rice... Cantonese is colorfully descriptive sometimes, esp when with food.

    Thanks for the healthier variation of fried rice. Can you make some videos about steamed dishes? Streamed dishes are an important part of cantonese cuisine as well and so healthy.

    Thank you for this. My husband prefers brown rice or japgokbap, so this hits the right notes. Question: do I need to make the rice like your dad does if I have a fuzzy logic cooker that has a brown rice setting?

    Great video, thank you Chef Lau! Does Chef Lau recommend making fried rice with freshly cooked brown rice over leftover brown rice? Really appreciate your dad's techniques, which are so legit but also more suited for the home chef without more powerful restaurant-style stove setups. His tips are spot-on. I also use medium brown over long for the same reason. I will adopt his method for stir-frying the chicken -- brilliant. One minor request: Could you make your dad's narration slightly louder? It helps us bilingual fans understand more clearly. Love your dad's inclusion of Toisan/Hoisan hua at the end of every video! Your family, and we, are blessed by his knowledge, generosity, and warmth. His love for everyone at your family table comes through the screen. ❤

    I've tried brown rice exactly once and hated it. It was flavorless & soggy, boggy, watery, mush. Presumably it wasn't prepared correctly, but it was incredibly off-putting. I've never felt inspired to try it at home.
    PS - the "iron hands" comment made me laugh with remembrance. My mother once was pulling out freshly steammed Maine lobster and told her friend to use the potholders to break off the tails. Her mouth dropped when the friend cracked them off with her bare hands. Turns out she'd worked in a science lab for years, in which she'd built up a tolerance for handling hot glassware😅. But I agree with your comment. People like your Dad & my Mom's friend developed that ability through years of necessity & practice, so the rest of us will need to use the potholders (I do!).

    I have heard that people prefer to use refrigerated rice to cook fried rice because it has a lower moisture content, what does Daddy Lau say about this?

    @ 8:42 you put cooked chicken and shrimp back into a bowl that held raw shrimp. That is a good way to get someone sick from cross contamination and it's just gross.

    I think it is also important to mention that alongside the added nutrition, brown rice unfortunately also is known to contain antinutrients and arsenic that certain people should be aware of.

    I noticed that you all are eating the fried rice using chopsticks on a plate. It is very difficult to eat fried rice or any rice on a plate with chopsticks, unless your rice is clumpy. We use a fork for rice on a plate, and use chopsticks when rice is served in a rice bowl. 😁

    Do not listen to Uncle Roger. He is a comedian and a joke. He is not a professional chef. He is unqualified to be giving critiques. Daddy Lau gives tried and true advice from years of professional experience.

      A fried rice can be cooked in many ways. An experienced chef like Uncle Lau can prepare any dish not only with one method. As for Uncle Roger, he already mentioned himself that he's a comedian and not a professional chef. There's no need to repeat what we already know. Also what he says in his video is what he learnt from a chef or through study on how to prepare the dish. So what Uncle Roger says in his video is not wrong because it was one of the methods of preparing the dish.
      So chill a little. Your take on Uncle Roger is like he did something bad on you or he hurt you 🤭

      Me neither. Brown rice still contains a lot of carbs, so no use for people reducing those, and the net effect on glycemic index isn't that different especially because you are likely to be eating your rice with other foods containing fats and proteins (and possibly vegetables containing fibre), the difference in fibre is quite minimal. There are more B vitamins in brown rice but I wouldn't say that was a reason someone couldn't eat white rice.

    Why is it that your believe that everyone has a ricecooker.? This video has no use for me and even confusing if you have a rise coooker. Couldn't make a useful idea out of it.

      My daughter talked me into getting a rice cooker, I thought it wasn’t necessary. Now it’s all I use, mine was very inexpensive & works great, rice is always perfect! If you have an instant pot , you can do the same thing, but rice cooker is easier and cheaper.

      @@ascricco987 same here. its just so easy- no messing aroudn with pots and pans. drop the rice in , fill water to the line and press go. then go cook other stuff while it makes itself

      Let me put it this way. If I want to cook fish and chips, first I need to buy fish and all the ingredients I need for the dish. If I want to cook an Indian dish, I need to expect it to be an Indian fish.
      So for your case, if you feel that you don't need a rice cooker and like you said it yourself "this video has no use for me...", you can just leave and watch other video. Or you want suggest to suggest that everyone must follow your way and only use things that you have in your house?
