The reason why Shirou manages to win here is twofold: 1) UBW already has all the weapons manifested within the reality marble, while Gilgamesh's Gate of Babylon first needs to summon them before they can be used - this is why Shirou's attacks are always "one step ahead" of his. It's like instant attack vs 0.5 cooldown attack, eventually Shirou's gonna pressure enough to get into striking distance to him. 2)Gilgamesh's own pride. Had he pulled out his golden armor or EA from the beginning there would have been no contest no matter how many swords Shirou threw at him, but because he was so full of ego and prideful he never took the fight seriously until it was too late. You can actually see in the anime the slight moment of hesitation where he summons EA, stops, then convinces himself and finally grabs it. That brief moment of hesitation is the only reason why Shirou manages to chop off his arm.

For those still confused about EMIYA appearing at the end - he didn't die in the castle. He went into spirit form and squeezed all he could out of that Independent Action class skill. Gilgamesh couldn't see him, because he wasn't in a servant vessel since the previous war, Rin and Shirou are humans and can't just see spirits and Saber is, technically, still alive, so not all servant rules apply to her. And no, he wasn't summoned by Counter Force. It wouldn't care about anyone's survival and would've given GARcher a cistern of mana large enough to nuke the whole area into oblivion. Not to mention, nothing there threatened the World enough to send a Guardian anyway.
I would have wished to see the weapon spam battle (they were continuously tossing weapons around even when they doing melee) and the mindset of Shirou that he should not let Gil take the time to catch his breath, so that he won't lose.

Those hypothetical equalized mana conditions would never exist between an incarnated demigod servant and a modern day human, and even if they did Gil is a better swordsman than this kid that also can literally see the future at will. Serious Gil never happens because of his personality, but if it did the holy grail war would've ended on the day it began.

Shirou and Saber beat Gilgamesh using Avalon and Excaliber in the Fate route where Saber is the main heroine unlike in UBW where it was Rin. Saber is indeed technically stronger than Gilgamesh.

I don't really think it would make a difference if Gil did have Excalibur. Like Shirou said, he didn't master ANY of the weapons. So if he had Excalibur, the only thing he'd do is throw it, the same as everything else. And I doubt the sword would work for him even if he wanted it to, so throwing it is probably all he could do with it. It would be out of character for him to treasure any other weapon. And the only thing treasuring Excalibur would do, is piss off any Knight of the Round he came across, because he shouldn't have it in the first place, and if he did, likely didn't get it through any honorable means.
Yeah you should probably watch fate stay night older ver (saber route) You can see Gilgamesh flexing his treasury to saber there, and by that i mean he literally used (not throwing it like he usually did) many different weapons in his treasury including Excalibur prototype Saber by default is stronger than archer stats wise but Gil treasury can help close that gap

The only difference between them is that he is inferior in technique since he is a jack of all trades master of none, therefore his martial prowess is good but not enough to match actual masters.
