The Pasta Queen has revolutionized pasta cooking in my home. I thought I knew a lot after I lived in Italy for a couple years, and in my defense I knew more than the average American; but I've learned things by watching her UA-cam tutorials that have really elevated my meals in my home. I am grateful and have been taking notes as I watch these videos.

So that's why when I used to make make a quick pasta I was too lazy to drain all the water out from spaghetti and by adding the sauce and flqvors and heating up it tasted so much better. Using some of the cooked water adds flavor.

No Italian cook puts that much onion to make a sauce. That amount of onions is good maybe to make onion soup. Sometimes I as an Italian wonder these cooks around the world where they learn to make Italian dishes.
@@aris1956 It’s a quote from Goodfellas. Sometimes I aim for authenticity but I’ll experiment a lot too. I like a red meat sauce with lots of onions and jalapeños because I’m from Texas. It’s kind of chili/spaghetti.
I got some pasta sauce at the store...it tasted super sweet and I went to see if they added sugar.....nope just made with Italian tomatoes, I grow my own san marzano tomatoes.... they're good but don't even come close to the ones grown in Italy.

My entire adult life, I've been assaulted by non-Italians giving me their "recipes" for Italian dishes. Of course, they all think they should open pizza shops. The best was a friend's mother, who put catsup (ugh) and -- oddio! -- Worcestshire sauce in her pasta sauce. I try to be polite, but it's so satisfying to watch you in this video!
The BEST Italian pasta sauce must come from Calabria (No I'm not Calabrian, I'm a Joburger but unlike most of my countrymen I like a Lil spice in my life, I'm sure most Asians, Latinos, and Europeans would agree with me).

For example, pizza in Germany has historically been a nightmare resulting from the lack of ingredients and the local tastes and in many cases still is, because the following generations learned to bake it like that. The meatballs in the pasta in North America were due to the meat being cheaper than in Italy, and the need of proteins for the heavy work in the factories of the 900s on the East coast. As an Italian I've seen horrors in many countries, but sometimes it's hard to keep your traditions or pass them on to the next generation.

I think the natives are really exposing people who claim to be experts at cooking. The decision is simple. Will you listen to the pasta queen who's a native italian who cooked pasta all her life or the chef who says he makes the best pasta but hardly has been cooking italian?
People from the UK should stay away from Italian foods. He put too much salt in his pasta water, you never! EVER! PUT Olive oil in your pasta water 😮 Please the unions are unecessary unless you put very small amount tiny fine diced. . You need the pasta water...you use the pasta water to put some in the sauce, just a little bit, it will help cook the Al dente pasta. You never drain your pasta...No! If your pasta comes out sticky that's horrific.

Should have been atleast half of the ingredients to the ratio tomato he had there. It was shocking to see the tomatoes swim in the onion sauce 😅
