I use prowls iron farm and just do the same thing and the size allows for 4 large trees or many single block trees. Not ever worried about saplings except DO when I first start a world

Instead of mining the tree with the stair case method most of the time i just pearl on top of the tree and mine downor just elytra.if u dont have an elytra or enderman farm use Scaffolding.

Tip: if you have a hoe with fortune 3 you can get more saplings, or if you need leaves just use a hoe with silk touch!

Use a Fortune III hoe to clear all the leaves and get more drops, which will increase your productivity.
