Ep 14: Poached Peaches from the Wood Fired Oven

- In this episode I make a delicious and beautiful dessert of Poached Peaches, served on circles of puff pastry, with some mascarpone cream, and finished with the fragrant poaching syrup.
Serves 4
2 Peaches cut in half
200g Sugar
300g White Wine
300g Water
1/2 Vanilla Pod
Puff Pastry
1 sprig of Lemon Verbena (or Lavender, Rosemary, or Thyme)
Equal amounts of Mascarpone and Heavy Whipping Cream

As far as calming goes, you wouldn’t even have to cook. Your voice, accent and delivery are purely therapeutic in itself. You would be a great narrator or you could sell bedtime stories for adult insomniacs. Or, you could just keep the recipes coming and, all here would be thankful!
The peaches are spectacular. I’d attempt this for sure.

@@TheWoodFiredOvenChef I made this desert this afternoon, my first test run of the puff pastry was a disaster, so I used baking paper on the dress rehearsal. Then I reduced the liquid too much and it turned to Toffee, very yummy and chewy but no good for dressing the peaches properly. So much for not drinking too much :)

I made these this last weekend (along with 5 small pizza's) for friends. I had to substitute pears for peaches because all the peaches were rock hard and had no scent whatsoever, but the pears were wonderful. I did everything exactly as you did except for the fruit. My husband cut out a pear shaped template for me to use for the puff pastry. They were very elegant looking and tasted divine. Thanks for a stunning dessert .
Hello Renee. Yes, towards the end of peach season they're particularly bland, so pears are a great substitute. I love the idea of cutting the pastry to the same shape. I'm sure it looked amazing. Thanks for letting me how it all went. I look forward to hearing more cooking stories. Clive

I tried this last night. It was wonderful! A lot of flavor, sweet but not too sweet. We used just a small sprig of rosemary as our spice. Even if you don't have a pizza oven you can make this. Give it a try!

I first watched one of your video's on the 12th of June this year and got inspired straight away.
I'm now the proud owner of my very own 900mm brick pizza oven which I built myself, it's only been finished for around 4 weeks and I've made 44 pizzas, 12 pitta breads, steaks and roast potatoes and roast chicken. This weekend I'll be wowing everybody with this..

It's perfect for using conventional cooking methods. I would do the poaching on the stovetop, and the puff pastry in the oven.

Hello Richard 1. Soak in hot water first. 2. I haven't had the problem. I think the secret is not too cook them too long or they would get hard.

Hello Brad. Normal syrup is equal parts sugar and water but this has a much higher liquid content. You definitely have to keep an eye on it while it reduces or it will become too thick. Thanks for commenting. Clive

Poached pears would be great. And obviously you can cut the puff pastry to match.

I think your videos are beautifully made, you make a cooking session into a ceremony. I would love to spend some of my future afternoons doing some of the things you do. It is not going to happen year around, if I continue living in a country, which is covered by snow half of the year, though?
Anyway, I have a question and a comments for you.
1. Please do not play the same tune as the background music in every video. It is serene once, twice, but after watching all your videos in short succession, the tune is sort of stuck in my head. I do not like it when a song is playing again, and again in my head. Even when I am dreaming, it is. But that is just me. If most of your followers love it, then you should continue doing it that way.
2. Where do you live? To me you sound like a British man, myself being Norwegian and all that, difficult to figure out every accent, but the scenery looks like Italy, Spain or California.
