Spatchcock Turkey on the Big Green Egg

  • This 13.5 pound turkey was brined using Dizzy Pig BBQ Company's Mad Max brine and rubbed with their Tsunami Spin rub. Spatchcoked and roasted on my Big Green Egg for 2.5 hours. This turkey will be the perfect centerpieces for your Thanksgiving meal.

      ​@@TheBBQBuddha Thank you Sir. I done the Spatchcock turkey yesterday (October 09). Wow! It was exceptional. Not sure if I will ever do a turkey any other way now. I have often spatchcock chicken but spatchcock turkey is a whole new level. I used a butter, olive oil and savory mix for my basting.
      Thank you for your video it gave me the inspiration.

    Hey just doing research for Thanksgiving this year. What was the size of your Big Green Egg. I have large Big Egg and have spatchcocked a turkey before, but worried it might not fit on my large Egg. Any suggestions

      This was on an XL. But, you should be able to fit a spatchcock turkey on a large.

    In the same boat as only having the Large Egg with 21.8 Turkey, no chance fitting when spatchcock. Still want to use egg, how and what style do you recommend. Never done a Turkey, family loves ur pulled pork and ribs. Thanks a ton

    For a 12 lb Turkey do you recommend using the entire bottle of Mad Max Brine mix or just 1/3? Looking forward to making this for Tomorrow. Looks awesome!

    I noticed you took your springs off of you XL Egg as well. It's very common with the new models for them not to seal with new springs. We need a solution to this after spending almost $3K on an Egg that is supposed to work as advertised...

      Great point. Wet brining is just one option. Try dry brining!

    Rookie moves here; have large BGE- also has 21# turkey... spatchcock or vertical ala beer can chicken style?
    And if smoking something that size- any idea for timing?
    Overnight? 10 hrs? I heard 30 minutes per pound..

      30-40 minutes per pound is right. Not sure spatchcock or vertical will fit in Large? May have to go with a roasting pan and V-rack.

      Thank you! Should be ok if it isn’t already packed in a sodium solution to preserve it. Just check the ingredients and you’ll know immediately.

    I’ve heard to rinse after pulling from brine, do you think that step is ever necessary, maybe with different brines?

      You can rinse... I think that’s what I’m doing with the towels ie getting the excess brine and aromatics off the bird.
