Even if they verbally agree to accommodate you, sending an email thanking them for the accommodations that they agreed to (including a list of those accommodations) and saying that you look forward to their classes is another way of confirming their agreement in writing. Although it can be difficult to stand up for yourself, sometimes you do need to escalate the issue if people are not abiding by the agreement. Having emails to support your claims is so helpful.
