100% Coconut Pound cake | Simply full of coconut

    This is a legitimate coconut pound cake. I thought a lot about how to add more coconut and the solution was to simply fully cover it with coconut powder! Voila!
    ▶Coconut Pound Cake◀
    Quantity: Two mini pounds cakes (pan size: 4.5 x 4.5 x 12.5cm)
    All ingredients need to be at room temp (approx. 20°C).
    ⊙Coconut Pound cake⊙
    Butter 80g
    Powdered Sugar 75g
    Coconut Powder 41g
    Almond Powder 16g
    Eggs 94g
    Cake Flour 65g
    Baking Powder 1.6g
    ① Lightly beat the butter.
    ② Sift in the powdered sugar/coconut powder/almond powder and mix.
    ③ Sift in 1/3 of the cake flour/baking powder.
    ④ Gradually add the eggs.
    ⑤ Sift in rest of the cake flour/baking powder.
    ⑥ Pipe it into the cake pan.
    ⑦ Bake it at 165℃ for 20mins. If using a larger pan, raise the temp slightly and increase the time.
    ⑧ When it’s out from the oven, apply the rum syrup while it’s hot.
    ⑨ Let it cool down completely on a cooling rack.
    ⊙Coconut Rum Syrup⊙
    Water 30g
    Sugar 15g
    Malibu(or other rum) 5g
    Melt the sugar in water (microwave) and then add in the malibu.
    ⊙Finishing off⊙
    Once the pound cake has completely cooled down, apply white chocolate (coating or couverture chocolate) with a brush and cover it with coconut powder.
    How to store: Store in an air-tight container at room temp up to 3~4 days.

    Hi Chef. Can we use your trick of adding almond flour to other cake recipes for better flavor? If so, what ratio do you recommend of almond flour : AP/cake flour? Thank you!

      oh yes of course!! but it depends on the cakes. If they are pound cakes, then definitely almond powder would be good (10%), but with genoise you shouldn't add almond flour as genoise is meant to be light and fluffy!

    Hi chef , Thank for your video. I need suggestion for pound cake if my mould (7") thickness, shall I increase temperature or increase time ?

      if it's larger/thicker you need to increase the temp/time. Just keep the temp as it is and increase the time!

    It's good enough without being put the chocolate and coconut flake outside. The batter was thicker than I thought, the result turns out to be on the denser side. I guess my coconut flour is drier than other brands. My hubby likes it, "cookie cake" that was his comment, thanks for the recipe.

    Hi Chef I wonder If I want to make in a normal size breadpan. Can I dobbel or trippel the recipe. Or is to much butter if I dobbel the recipe, I baked the written recipe and it was perfect verry good- thanks chef

    What is the different between baking Soda and baking powder? Can I change or substitute baking powder to baking soda?

      oh these type of pound cakes? usually 3~4 days in an air-tight container at room temp.

      hmm never seen peanut flour before. I guess the sugar would be ok although I've never seen panela sugar before.

      @@HanbitCho Thank you for answer! =) Peanut flour is made from crushed peanuts. Panela sugar is a non-centrifugal sugar, dehydrated sugar cane juice. Great with coffee, cookies, scones, breads, granola, and chocolate.
