    ▶Classic Scones◀
    Quantity: 4 Scones
    All ingredients need to be chilled
    ⊙Scones⊙
    Unsalted Butter 65g (2cm cubes when using food processor, 1cm cubes when doing it by hand)
    Cake Flour 162g
    Baking Powder 6.3g
    Salt 1g
    Sugar 41g
    Whole Eggs 40g
    Heavy Cream 55g
    ① Mix & sift the dry ingredients into a bowl (cake flour, baking powder, salt, sugar).
    ② Add the butter (must be chilled) and blend (use the pulse function of the food processor. If doing it by hand, cut in the dry ingredients into the butter using scrapers)
    ③ Add the liquid (whole eggs + heavy cream) and mix. Do not overmix.
    ④ Transfer the dough onto a mat and bring everything together (knead briefly). Use dusting flour when needed.
    ⑤ Roll the dough into a rectangular shape, cut it in half and stack it.
    ⑥ Repeat the previous step twice.
    ⑦ Cut the dough into 4 triangles (they should be roughly 90g)
    ⑧ Apply egg wash (equal amount of whole eggs and heavy cream mixed well together).
    ⑨ Bake at 190°C for 13~15mins (Pre-heat to 190°C)

    I'll give it a shot as soon as possible, hopefully tomorrow or the day after. Looks like a delicious scone, but I imagine it would be difficult to replicate in such a hot climate as Taiwan.

    레시피를 보면 마들렌이나 스콘 들어간 주재료에 따라 용량이 조금씩 다르던데..여러 종류의 스콘을 만들려면 스콘 종류마다 따로따로 계량을 하는 방법 밖에 없나요??공통으로 들어가는 재료들은 똑같이 넣고 서로 달리 넣는것들만 따로 계량하는 방법은 없을까요?^^;

    I really love to eat k things and there are so many people's who wants to eat k things. I am living in Pakistan where I can only buy things and can make things for myself.     Chef, thank you for recipe. I am going to try it tomorrow. Can I ask, the temperature, is fan forced oven? My Smeg oven has fan and no fan feature. So using your recipe, I should turn the fan on (fan forced) and bake at 190 degree as written? And if I don’t use fan, i should bake at 210?

      yeah i use fan assisted oven. well i suggest you use the fan feature.

    I have a question.
    If the whole egg weighs more than 40gms (let's say 50gms) then how to reduce the weight of the same?
    Do you reduce the egg white to make it 40gms?

    It's turn good and light however I can taste bitter and sharp from the baking soda ...I put 12gr baking soda with 320gr flour (I double up the recipes) ...can you tell me what kind of baking Power brand that you use? And does anyone have the same problem with me?

    Hi chef, Would you like to try the recipe I use, its off UA-cam but I can't remember who originally uploaded it but all credit to them it's a pretty nice recipe... I've tried so many of your recipes and thoroughly enjoyed them.. 😁i guarantee you ll like it😊
    250g self raising flour
    150ml pouring cream
    Couple pinches salt
    50ml buttermilk
    50 g grated butter (on the large side of grater, just grate it cold and then toss it in the flour and chuck it in the freezer... Nooooo eggs!!
    Mix the cream and buttermilk, you may not need all of it depending on your flour..
    Everything else pretty much the same , mix everything with a fork then , stack it a few times but pat it out rather than roll.. Cut, chill and brush with cream and bake in a super hot oven..
    I don't add sugar as this way you can have it with sweet or savoury ..
