  • This is an old video, I was holding my camera with my right hand while working with my left hand.
    I apologize for the video quality also it was my first time cooking experience.
    Due to tradition, I was not allowed to remove my wedding rings as it was the same year I got married. I've actually removed the rings while kneading the dough. Also I washed my rings and my baked buns are NOT raw, they are being baked in hot oven!!! So obviously NO bacteria! I've eaten them and I'm still alive!

    Ingredients
    For the dough
    3/4 cup of milk
    4 cups plain flour
    1¹/₄ tsp active dry yeast
    1/4 cup of granulated white sugar
    2 tbsp soften partly melted margarine
    2 small eggs
    Ingredients for the coconut filling
    1 cup of desiccated coconut
    1 tbsp soften partly melted margarine
    4 tbsp of icing sugar
    1 tsp or a drop of vanilla essence
    Toppings
    4 tbsp icing sugar
    2 tbsp cornflour or flour
    3 tbsp soften or partly melted margarine
    1 egg yolk
    0
    Glazing (syrup
    1 tbsp granulated white sugar
    1 tsp water
    Method
    Prepare the dough
    In a bowl, add 3/4 cup of milk and 1/4 cup of sugar.
    Mix well and heat in microwave for 20 seconds or until lukewarm not hot
    Test with your finger if the milk is not hot before adding 1 1/4 tsp of active dry yeast.
    Mix well.
    Let sit for 10 minutes
    After 10 minutes, add 2 tbsp of soften partly melted margarine and 2 eggs.
    Mix well and set aside.
    In another empty large bowl
    Add 4 cup of plain flour
    make a dent in the middle, add the yeast mixture you've just prepared.
    Mix and knead, you may need extra flour if dough is too sticky but it is always better to have a sticky dough for best result.
    Knead for 10 minutes until the dough forms into a soft and sticky ball.
    Cover with a lid or a kitchen towel and set in a warm place like in a microwave,
    Let the dough raise for 1 hour or 1h45 minutes depending on the temperature at your place.
    After 1 hour, my dough has raised well doubled in size.
    Prepare the filling mixture
    Add 1 cup of desiccated coconut, 1 tbsp soften partly melted margarine, 4 tbsp icing sugar and 1 tsp of vanilla essence. Mix well. Set aside.
    Press the dough to deflate it and remove the air, add some flour if too sticky and fold each sides and press but do not knead again.
    Line your baking tray with parchment paper
    Dust your working pastry board with flour
    Take out a small portion of the dough (a bit smaller than a tennis ball.
    Roll it on your floured pastry board
    Tuck it and stretch to shape into a horizontal oval shape or a rectangle.
    Fill with 1 tbsp of coconut mixture and roll to close the dough.
    Press each sides to seal them.
    Place in your prepared baking tray, proceed for all leaving 3 cm distance in between.
    Let raise for 45 minutes until raised enough.
    Makes a total of 10 buns.
    Prepare the toppings
    Add 4 tbsp icing sugar, 2 tbsp cornflour or flour
    3 tbsp soften partly melted margarine
    Mix well. Result must be like a cake batter. If too runny add more flour or too dry more margarine.
    Put in a dispenser
    After the buns have raised
    Preheat oven 175 degrees C for 10 minutes.
    Brush the buns with egg yolk
    Make 2 or slash lines // by dispensing the prepare mixture.
    Bake in preheated oven for 12 to 15 minutes or until golden brown.
    (DO NOT OVER-BAKED, it will lose the softness)
    In the meantime prepare the final glaze,, the syrup!
    Heat 1 tbsp of granulated sugar with 1 tsp of water for 1 minute.
    After the buns have baked beautifully , remove from oven and glaze with syrup immediately and let cool until the buns are dry when touched.

      The aim was to show the technic , the rest depends on the person bacteria or not, your video is awesome, and hat's off for your efforts, seems it wasn't easy working with one hand, thanks for your video wish it was vegetarian as I'm vegetarian

      I'm staying in India currently, Can you tell me which brand are you using for the yeast and flour?
      I've tried many brand of yeast, none of them working well. Dough is proofing but take longer time and not much big in size.
      And also a bit difficult to find bread flour (high protein) as in India mostly people use just maida

      I do use Maida too for bread, I use Anchor brand yeast. It worked great 😊

    Great recipe! I cooked it for dinner tonight and the family loved it! I made the buns half the size from the recipe to get twice as many...and the buns were still big. Yummy!

    In Barbados we have turnovers similar except we use freshly grated coconut and make the buns similar in length lay them end to end so the just pull apart when finished. We also brush with brown sugar syrup

      sonia sandiford wow thanks for your feedback. Glad to know in Barbados they make sweet buns almost same like mine. In fact, I'm from Mauritius Island, it's our traditional sweet buns and we call it Macatia Coco here. Hmm will try freshly grated coconut next time, sounds super scrumptious!

    Ingrédients en Français
    Pour la pâte
    3/4 tasse de lait
    4 tasses de farine
    1¹ / ₄ c. À thé de levure sèche active
    1/4 tasse de sucre blanc granulé
    2 c. À soupe de margarine partiellement fondue
    2 petits œufs
    Ingrédients pour le remplissage de noix de coco
    1 tasse de noix de coco desséchée
    1 cuillère à soupe de beurre ramollir la margarine partiellement fondue
    4 c. À soupe de sucre glace
    1 c. À thé ou une goutte d'essence de vanille
    Garnitures
    4 c. À soupe de sucre glace
    2 c. À soupe de farine de maïs ou de farine
    3 c. À soupe de margarine ramollie ou partiellement fondue
    1 jaune d'oeuf
    0
    Glacis (sirop)
    1 cuillère à soupe de sucre blanc granulé
    1 c. À thé d'eau
    Préparer la pâte
    Dans un bol, ajouter 3/4 tasse de lait et 1/4 tasse de sucre.
    Bien mélanger et faire chauffer au micro-ondes pendant 20 secondes ou jusqu'à ce que tiède ne soit pas chaud
    Testez avec votre doigt si le lait n'est pas chaud avant d'ajouter 1 1/4 c. De levure sèche active.
    Bien mélanger.
    Laisser reposer pendant 10 minutes
    Au bout de 10 minutes, ajouter 2 c. À soupe de margarine partiellement fondue et 2 oeufs.
    Mélangez bien et mettez de côté.
    Dans un autre grand bol vide
    Ajouter 4 tasse de farine
    Faire une dent au milieu, ajouter le mélange de levure que vous venez de préparer.
    Mélangez et pétrissez, vous mai besoin de farine supplémentaire si la pâte est trop collante, mais il est toujours préférable d'avoir une pâte collante pour le meilleur résultat.
    Pétrir pendant 10 minutes jusqu'à ce que la pâte se forme en une boule douce et collante.
    Couvrir avec un couvercle ou une serviette de cuisine et le mettre dans un endroit chaud comme dans un micro-ondes,
    Laisser la pâte lever pendant 1 heure ou 1h45 minutes selon la température à votre place.
    Après 1 heure, ma pâte a levé bien doublé en taille.
    Préparer le mélange de remplissage
    Ajouter 1 tasse de noix de coco desséchée, 1 cuillerée à soupe de margarine partiellement fondue, 4 c. À soupe de sucre glace et 1 c. À thé d'essence de vanille. Bien mélanger. Mettre de côté.
    Appuyez sur la pâte pour le dégonfler et retirer l'air, ajouter de la farine si trop collant et plier les côtés et appuyez sur, mais ne pas malaxer à nouveau.
    Lignez votre assiette avec du papier parchemin
    Farinée votre table de pâtisserie
    Sortez une petite partie de la pâte (un peu plus petite qu'une balle de tennis.
    Rouler sur votre pâtisserie farinée
    Pressez et étirez à la forme dans une forme ovale horizontale ou un rectangle.
    Remplir avec 1 cuillère à soupe de mélange de noix de coco et rouler pour fermer la pâte.
    Appuyez sur chaque côté pour les sceller.
    Placez dans votre plaque de cuisson préparée, procéder pour tous laissant 3 cm de distance entre les deux.
    Laisser lever pendant 45 minutes jusqu'à ce que suffisamment élevé.
    Donne un total de 10 brioches.
    Préparer les garnitures
    Ajouter 4 c. À soupe de sucre glace, 2 c. À soupe de farine de maïs ou de farine
    3 cuillerées à table ramollir la margarine partiellement fondue
    Bien mélanger. Résultat doit être comme une pâte à gâteau. Si trop liquide ajouter plus de farine ou trop sec plus de margarine.
    Mettre dans un distributeur
    Après que les petits pains ont soulevé
    Préchauffer le four à 175 degrés C pendant 10 minutes.
    Badigeonner les petits pains avec du jaune d'oeuf
    Faire 2 ou barre oblique // en distribuant le mélange de préparation.
    Cuire au four préchauffé pendant 12 à 15 minutes ou jusqu'à ce qu'il soit doré.
    (Ne pas trop cuite, il va perdre la douceur)
    En attendant, préparez le glaçage final, le sirop!
    Chauffer 1 c. À soupe de sucre granulé avec 1 c. À thé d'eau pendant 1 minute.
    Après que les brioches ont cuit magnifiquement, retirer du four et glacer avec le sirop immédiatement et laisser refroidir jusqu'à ce que les petits pains soient secs quand ils sont touchés.

      Anusha Seebaluck If you do not add egg, it will not turn fluffy and soft, if so then you will need to buy a bread improver or just use 1 cup of condensed milk then will need to skip the sugar, milk and egg.

      Baking Recipes watching you trying to make a recipe, done and cooked with one hand are my pleasure. I just jump in into this video of yours, because of your caption. When I was small we love to buy a bread which we called it, in our country as "Pan de Coco" which derived from Spanish word. We were once conquered by Spaniard way back then. So, most of our word used today are or has Spanish word added in it. And there were really a place in my country that usually speak Spanish as their tribe-spoken dialect. Any how, just saw one of your video and love to watched more soon to learn. Thank you and take care. God speed😘

      Kunghye Deaux Aww this is so interesting! I'm from Mauritius, we call this bread, Macatia Coco, the name is a combination of french and creole. This sweet bread is one of my favorite since childhood, I still remember the old days, my late father who used to buy them for me after school time from a street vendor, the man from a little vehicle.
