How to Make Mini Cherry Cheesecakes/Dessert Party Bites

Easy recipe for bite-sized mini cherry cheesecakes. Simple and delicious sweet treat for just about any occasion.
Ingredients for 12 pcs
1 cup (measuring ingredients) or 8 fluid ounces = 237 ml
Ingredients:
Base:
• 160 g - 5,6 oz shortbread biscuits (you can use any biscuits or cookies you choose)
• 80 g - 2,8 oz unsalted butter (melted)
Cheesecake Filling:
• 400 g - 14,1 oz cottage cheese with 5+% fat (I used fresh from a farm)
• 100 g - 3,5 oz mascarpone cheese
• 100 g - 3,5 oz whipping cream
• 100 g - 3,5 oz granulated sugar
• 3 eggs
• 1 egg yolk
• 1 tbsp lemon juice (optional)
Decorating:
• 150 ml whipping cream min. 33% fat
• 1 tbsp sugar powdered
• cherry jam or cherry pie filling canned
• cherries fresh
