I feel like gorge always has the wackiest spawns that are awkward to defend. I've been favoring eco wing and getting fertile crescent for earlier farms. One thing that helps is making sure not to build any houses or random stuff next to the TC from the start so you can at least get a safe ring of farms down whenever you need it. If you get to castle and get fertilization too, you're set.
