    I love her and her books. She sounds just as intelligent when she speaks as much as when she writes. Thank you Gianaclis. Your books have helped me very much in setting up an artisan dairy house for our King's Royal Project, all the way across the world here in Thailand. Your books are the only cheese making books I hold.

    I love how she describes why you would like cows over goats. YES! Finally a way I can describe why I prefer my Jersey cows over a milk goat. I have 8 kids, 4 grand babies, there are always toddlers and preschoolers running around so I have my fill of toddlers. :) I do NOT need a toddler goat. The cows are my break in the day where someone just goes with the program. LOL! Thank you Gianaclis!!! Can't wait to try my hand at cheese making now. I am reading both her books.

      I just had to get rid of my Nigerian Dwarf milking goats because of needing hip surgery. I miss them, but what she says about them being naughty little children is so true!

    Having visited the US, cheese is something that has passed America by...Hopefully it will wake up to it just like it did with proper Beer and Lager.

      @@gianacliscaldwell999 oh wow, nice to see you here on UA-cam. I have been holding your books as bible for the last 6-7 years, all the way here in Thailand. After I discovered your book and had it delivered from overseas, I finally was able to reach professional level cheesemaking and created more than 10 funky recipes of cheese for Thailand. Thank you so much for your effort to create such a thourough book that is so easy and entertaining to read. And so detailed and comprehensive you went out of your way to include so many tables in the appendix that are extremely useful. Consider me as your disciple. Hope you have great health and cheers to you.

    I teach sanitation to culinary students. I have been telling them it's a federal law that milk has to be pasturized to prevent Listeria. Is there an exception to that rule when you make artisan cheeses? Are you allowd to sell raw milk to the public?

      VA Purl Some states allow the sale of raw milk, but it varies. You can find out more via Real Raw Milk Facts on their 'State by State' page (www.realrawmilkfacts.com/raw-milk-regulations). It's stated in our written post (via link in description box): "Pholia Farm Creamery and Dairy produces only raw milk aged cheeses. In order to sell at retail stores, raw milk cheese must be aged a minimum of 60 days, though her cheeses age for longer periods, between 4 to 13 months, depending upon the variety."

      VA Purl It is not federal law. Each state has its own rules and regulations.

      VA Purl Hi, this is Gianaclis. It is Federal law that all cheeses aged under 60 days MUST be pasteurized. Raw milk cheeses can be made legally only if aged over that amount of time. That is the current rule. Some states allow for exceptions usually under herdshare rules or other caveats, but those cheeses are not supposed to be sold in restaurants, retail stores, or across state lines. In addition, all cheeses made that are sold to the public must be made in a licensed facility under whatever state laws exist and are subject to FDA inspection.

    appreciate what she's contributed.. however, to add to her differentiation between cows and goats... cows are like toddlers in their own way just a bigger one that doesn't like change but they can be difficult as well. They're just not as high energy as goats. breed difference also includes attitude and even intelligence differences.
