Since we don’t really eat spicy or fermented foods you just have to take a leap of faith and try it for yourself. That’s how I did it. There are different types of Kimchi too. My personal fave is radish kimchi since it’s crunchier than cabbage
I totally cheat and use a kimchi base, there's a really good one I found (has to have fish prominent in the ingredients) but it's like 6 bucks a bottle, I think I'm going to try to make if from scratch next time. kimchi Persian cucumbers are the best
