Hi guys, Me and my husband are in volountary quarantine here in Sweden. The planned trip to Spain have been cancelled. It is a bit boring here at home, but your videos are making life a lot of funnier. We just love your videos! We would like to tell everybody to support you by buying the digital cookbook! Thank you so much!
Kia ora James - big fan of your videos! I'm a fellow Kiwi with a Spanish partner. We used to live in Spain together, but for the last few years have been living back here in New Zealand. Two of the things I miss the most are croquetas de l'avia and romesco sauce. I'd love to see a video of either of those if you happen to know a good recipe!
Y con las peladuras de las gambas te puedes hacer un fume de marisco delicioso para el proximo arroz que hagas. En la cocina no se desaporvecha nada. And with the prawn peelings you can make a delicious seafood broth for the next rice you make. Nothing is wasted in the kitchen.
The first time I went to Spain I fell in love with all the food, in particular with the Gabillas al ajo. I asked for the recipe. I haven been cooking Gambas al ajo here in the USA and people really like them (not to brag). My family and I went to Spain in Feb/March (just before the Pandemic). IWe went to some of the restaurants that you recommended (incluyendo El Botin por su puesto). We order many different tapas except Gambas al ajillo, since I claim I make them just as delicious. I have never use vino blanco, however I will next time I make them.. Stay strong Spain during this difficult time. We are all in this together. Salutations from, USA.
Great work.. I have only missed a clay pot insteed of your famous pan, but not everybody has one at home. Clay pot is used to keep the shrimps hot longer as they get cold really fast once out of the pan.
Enjoyed making this recipe after watching! Such great/fun videos during this time! Can’t wait to try more of yalls recipes 🥰🇪🇸❕much love from south Texas! 🤍
I was in Madrid last year. Before I arrived I found your videos, memorized your restaurant Spanish phrases, then visited Casa Alberto & Mercado de San Miguel from your suggestions. I had a wonderful visit thanks in part to you. Stay well! Hope to visit Madrid again soon as possible... Loving your cooking videos too :)
I love Casa Alberto. That place is Madrid in a nutshell. I actually prefer eating in the small bar rather than the restaurant at the back. I know some other very good places in the centre but off the radar if you're interested. Cheers. WT
Thanks a lot for the great video and the receipt! I adore shrimps and can cook them in many different ways, but Spanish receipts are always the best!:)
That's amazing your videos, James... Always.. Tomorrow I will do this dish for my lunch.. It's a great receipt... I love everything from Spain.. And you guys can do this so more beautiful... #staysafe #stayhome #backsoon #everythingallberigtht Your follower from Coimbra Coimbra - Portugal 🇵🇹🤗🤗👏👏
Great video, James and Yoli! Gambas al ajillo is one of my favourite dishes. Stay healthy and safe and keep up the great Spain content. Videos like yours lift up my spirits in this very down time!
Gambas al ajillo. If there is only one food in heaven, let it be that! It’s my favorite food in the world, and my absolute favorite is from Casa del Abuelo. Thanks for the video-it looks delicious! ¡Un abrazo!
I knew I shouldn't have watched this... now I'm craving it and don't have the ingredients. But seriously, I always enjoy your videos. Stay safe from Canada :)
love these relaxing and informal home cooking videos. Feels like transfering myself from Malta into your Madrid Kitchen. Considering the circumstances we are all living under. I say, you have the right ingredients guys, hihi, Muy bien y hasta la proxima. ciao ciao desde Malta.
FYI- it’s CHILE not CHILLI or it would have a different pronunciation with the double L’s, at least for the Spaniards who came from Spain 300-400 yrs ago with the Conquistadores & settled in New Mexico, US. To pronounce it as you have spelled it would be the Anglo pronunciation or if you are being lazy all American, lol (which we all do a lot!). Really love your videos, you two have such great chemistry!
It was my favorite little restaurant in Madrid. Went back twice for this dish. Left Madrid with a few of the ceramic dishes they make it in and make it all the time now.
Love you guys!!! Will definitely give this a try this weekend. Thank you so much for your recommendations!! My husband and really enjoyed Casa Toni at your recommendation . Stay safe!! :)
I really wanted a bite of that dish. It looked so good !!! James, you are becoming the reincarnation of Julia Child, because you drink wine the entire time you are preparing a dish. I love it !!! If only you could do that high-pitched voice of hers, it would seal the whole thing for me. Buen provecho !!!
It doesn't hurt that you have access to some of the best bread in the world. Keeping the cooking videos shorter is a sound idea. I appreciate the joy you two put into them. Thanks and stay safe.
Not sure about that - a lot of Spanish daily bread is quite average. Though there are better options nowadays. Thank you for your comment Jeff - happy cooking!
It's a great dish and James does it justice. The fresher the prawns the better. The fino is absolutely the key that makes this a great Spanish dish. If it was white wine it could be Italian and mixed with pasta. Fino and seafood is a marriage made in heaven. All mopped up with good bread. Delicious. I'd be cooking it this week in my little place in Andalusia, where it's special, but I'm stuck elsewhere. I'll raise a glass to James and Yoli.
Tip James for drying wet parsley. Take the washed, wet parsley, cilantro or any herb. Place it in the middle of a clean tea towel. Grab the four corners of the towel and give is a good, vigorous swing and shake. Works good too for washed lettuce, if you don't have a spinner on-hand.
One of my favorite dishes...I have tried it in Barcelona, la caruna, lanzarote, Santander & many places in spain ...but best gambas al ajilo was in tenerife (canary islands)authentic.. perfect gambas...perfect spice & sizzle to the dish...I'm in Mumbai now but still miss it....the dish u made missed the sizzle...when u get gambas all ajilo on ur table it is full of sizzles.... Anyways enjoy watching your videos
James and Yoly, you got it right -- sipping some nice wine while cooking, enjoying the process 👍🥂. What you may lack is some music to your liking in the background to lubricate your culinary creativity 😁. ¡Salud para vosotros dos 🙏! 🇺🇸
In Portugal we do this dish but with butter instead of olive oil because it makes it creamier. But I'll try this version next time I make shrimps and garlic 👌👌
My wife and I are making your Dish tonight. We went to the local market here in Bangkok and got the ingredients. Watching the video again we now realize we forgot the white wine 😭
Love the bit about 'no such word in Spanish for remove veins'!....gross though if you don't. I live in the East Algarve (just over the border from Ayamonte) and the dish is almost the same (Camarão con alho) except they add some paprika so it has a more reddish look to it. This is a throwback to their past connections with India. They would also sprinkle some coriander on top which I don't think is so popular in Spain. Probably the best dish in all of Portugal is 'Arroz de Tamboril'....monk-fish with rice which also includes local 'camarao' and 'Amejoas'; delicious small clams.
In Malaga we make prawns al PIL PIL, in the pan we put olive oil, a lot of finely chopped garlic, paprika (which gives them a good color and flavor), a lot of parsley and the peeled prawns, it is not the same as prawns al ajillo
Gambas Al Ajillo 💕most delicious w/bread soaked in all that goodness oil LoL! I know garlic is healthy but i just can't stand the taste & smell of it LoL! 😂
Hi James, have to say I love your films about the food over in Spain. I have been to Spain and found it very difficult trying to eat out. If you don’t talk a word of Spanish most of the time you just get ignored as soon as you say hello. Then trying to ask for something well they just stare at you. If you can speak Spanish, I am sure it’s great but me and the wife did not enjoy it at all.
Pil pil is more a Basque term for a sauce made from oil, chilli and garlic. The best version of pil pil is when made with cod . When it's cooked slowly , like you would a confit, you can emulsify the sauce. It's absolutley incredible .
In India everyone is used to heavy spices ... so when we go to any western style place where the shrimp/prawns in garlic and olive oil are only steamed or cooked for a little bit of time ... like in this video here ... the waiter will always make it a point to tell you this and will also tell you that there might be a little bit of a fishy smell to the prawns because of this. :)
All previous comments are wrong - with all due respect. It has to be lightly chilled fino or manzanilla. This is a great simple dish and should be accompanied with something similar. Posh white wine with garlic and chilli? Na. This is a dish of the sea and the drink should enhance that. Fino or manzanilla (superb value for money) is salty and tangy and the ultimate enhancer of seafood. (A great secret of Andalusia.)
James y Yoli , la caña de España... Gracias por mantener el ánimo de la tropa .

Thanks for that Alexei - I look forward to hear how you go with adding a dash of white wine!
just dont call them "gambas al ajo" or "gambillas al ajo", it's "gambas al ajillo", everything else sounds weird
I make this for my husband because we learned in Spain and it is one of his favorite dishes. Soaking up the sauce. Divine! Thanks guys! Stay safe.
Great work.. I have only missed a clay pot insteed of your famous pan, but not everybody has one at home. Clay pot is used to keep the shrimps hot longer as they get cold really fast once out of the pan.
I def. need to get one of those post lockdown!

Thanks guys. I love gambas al ajillo; I make it often. But it never tastes quire as good as when i'm in Spain. Stay well. xx

I'll keep them coming!
Hola By the time lock down is finished you should have the cook book finished !
haha maybe!
Just try and pour those onto some spaghetti, with its oil and all. Best pasta you'll ever try. ¡Me encanta vuestro canal!
great idea!
Love the tradition in markets giving away the parsley with your shopping .
Looks delicious, Thanks James and Yoli!
Super Taster Yoly!! Love it, looks amazing!

Lol you’ve gone from kitchen beginner to UA-cam chef in a single video - nice 👍 buen provecho 😀
gracias!!
Love you guys!!! Will definitely give this a try this weekend. Thank you so much for your recommendations!!
My husband and really enjoyed Casa Toni at your recommendation . Stay safe!! :)
Let us know how you get on!
Made it! Delicious! Gracias.
I could almost taste them! Well done!! I will try your recipe soon.
I really wanted a bite of that dish. It looked so good !!! James, you are becoming the reincarnation of Julia Child, because you drink wine the entire time you are preparing a dish. I love it !!! haha need to watch some Julia Child videos.

Not sure about that - a lot of Spanish daily bread is quite average. Though there are better options nowadays. Thank you for your comment Jeff - happy cooking!
The sherry was a nice touch. The acid and sweetness bring the richness of the shrimp and oliva into relief.
yeah, it's lovely - you don't need much. But it's delish
Just made the recipe for my family, they loved it!!! Thanks for an easy recipe :)
So glad!
Vaya crack. Que nunca falten unos buenos lingotazos de tinto XD. Un abrazo.

You two are too cute! Love the marriage proposal at the end. jaja Saludos desde Canadá!
A sheer success....An easy dish to make but like everything, its down to the produce and the timing😜...10 out of 10 for your efforts
totally!
Well done James
Thank you!
Que Buena. Un abrazo de Sueçia
One of my fave Spanish foods ❣️👍
Yummy! I'm going to try it on Sunday. No sherry, but I have a bottle of Cava in the fridge. 😋 Thank you Yoli and James, ¡Felices Pascuas!

Thank you Debbie- happy cooking!
¡Bien hecho!
Just tried this. Fantastic!
Wanted to add a picture but can’t.

Terrific tips! I've got everything except parsley, so I will use coriander instead. Thanks guys!
Yumm!
James and Yoly, you got it right -- sipping some nice wine while cooking, enjoying the process 👍🥂. What you may lack is some music to your liking in the background to lubricate your culinary creativity 😁. ¡Salud para vosotros dos 🙏! 🇺🇸
true!!
Beautifully explained. They look insanely tasty!
me encantan las gambas al ajillo
House of the grandad. Great name for a bar.
Love this food 🙏🏼🤗😘
In Portugal we do this dish but with butter instead of olive oil because it makes it creamier. But I'll try this version next time I make shrimps and garlic 👌👌
The shrimp will be ready in the time it takes James to drink a glass of wine ;)
You can also use the shrimp shells to infuse the oil. Works best with raw shrimps but precooked are fine.
Would love to watch your flamenco yoli😍
Get a salad spinner for your wet herbs. It works great and makes chopping easier.
My wife and I are making your Dish tonight. We went to the local market here in Bangkok and got the ingredients. Watching the video again we now realize we forgot the white wine 😭
My favorite tapas mnomnomnomnom.
I just think I found my idea for dinner today......😋
More tapas recipes!!!!
Little tip I got from living in Asia, use scissors to 'cut' herbs. I, too, hate cutting them after the wash.
great idea!
Next recipe. Patatas revolconas, with delicioso pimenton de la Vera.
Maybe!
Amazing how-to video! throughly enjoyed it! We can't to try this recipe ourselves! big hugs
Buen video ! Desayuno eso con huevos fritos muchas mañanas jajaja Saludos y estad sanos
I love that dish so much that I have it in my profile picture. I think it's from a bar in Malaga called Wendy Gamba.
Love Wendy Gamba!
Those are not gambas al ajillo, in Malaga we make gambas al pilpil : prawns, oil, garlic, paprika, parsley and chili
Requesting for
1. Mushroom
2. Pig ears
Request: CALLOS a la madrileña with cheackpeas

I like to add a pinch of a smoked paprika and a small knob of butter at the very end.
My favourite tappas James
Hi when this lock down is over Would really like at tour of a tappas round i Madrid with you and jolli .I know that time is Money
Enjoying these. So when can you show us how to make "Flan" or Cream Caramel?
if you dont like chopping parsley you can cut it with small scissors -its rally easy
Thanks for uploading love from Isle of Man (Peter, Esper and Elijah)
Keith Floyd used to support his cooking with a long sip of wine.
Indeed. A Quick Slurp. The best television chef ever. Cheers
haha yes
Bravo my dear friend , soon we wil see you on live tv 😎
maybe! Or at least live on Instagram!
1 day ill go too Spain..
For tourist they: will find the same recipe also called "gambas al PIL PIL"
"al pil-pil" means with some paprika and white wine, but yes, its almost the same.
not the same thing
In Malaga we make prawns al PIL PIL, in the pan we put olive oil, a lot of finely chopped garlic, paprika (which gives them a good color and flavor), a lot of parsley and the peeled prawns, it is not the same as prawns al ajillo
Gambas Al Ajillo 💕most delicious w/bread soaked in all that goodness oil LoL! I know garlic is healthy but i just can't stand the taste & smell of it LoL! 😂
Hi James, have to say I love your films about the food over

Typed in "gambas al ajillo james" and your name came up first before Jamie Oliver. 💃💃
yum.
One of my favorite dishes down in Malaga they seem to call it gambas a pil pil.
Pil pil is more a Basque term for a sauce made from oil, chilli and garlic. The best version of pil pil is when made with cod . When it's cooked slowly , like you would a confit, you can emulsify the sauce. It's absolutley incredible .
Yeah, I've always found the gambas pil pil term a little confusing, given the Basque sauce.
Interesting!!
I've never seen that dish with such TINY prawns! 😂 Surely, you can do better than that in Australia!
Next should be gazpacho.
si, se acerca el calor estival
great idea!
TODAY'S QUESTION: What do you think is the best drink to pair with gambas al ajillo? 🥝Let's discuss in the comments! ⬇️
White wine, definitely!
Ice cold Chablis Premier Cru would be nice.
Albariño
Lambrusco rosado y bien frio. Mejor compra dos o tres botellas, se bebe como el agua con este plato.
Ahahahahahaaaaaaa, that's so funny, wham bam thankyou maam. Don't know about you southerners but that has a very specific use. :-)
oh I know!
Yes in Spain they do crush garlic “en el mortero” and it is used with some recipes. Look for them please.
That's true!!
Also one of my favourites here in Murcia......I also like mushrooms in garlic cooked the same way!
Yes, or asparagus is a great idea!
It that you???? The guy with long leaves, tan sweatshirt???😲 4:55
haha no that's my brother in law :)
