If I saw a cook doing this in a restaurant, I would walk away. He said "this is part of the process", well, that's not true.
I mean most people wouldn’t, obviously you could crush it further with utensils. But using your hands is integral to many processes, such as making fresh pasta, pizza base or even cheese
@@TheLeoBianco1 I can agree if you do it privately at home, in a restaurant when you cook for other people, no, it's not an elegant thing to do and there are also health rules. He could at least wear gloves.
@Crystal Galvan actually, the Italian and European rules and laws, regarding the production and distribution of food in general, are stricter than that of the USA.
