    I mostly followed the red sauce recipe which is a fire recipe. Didn't have puya chili, cloves, or whole cumin (used cumin powder). Added chili de arbol, used 14 ounces of crushed tomatoes vs. tomatoes, added beef bouillon and better than bouillon beef base to the 2 cups chili soaking water. Plus added a can of chipotles in adobo sauce. Smoked the meats for a short period which were chuck roast and short ribs and then braised in a dutch oven with the red sauce. So good and wouldn't have came out nearly as good without this video and recipe as the base!

    5:33 Wow 🤩 look 👀 at that meat so tender yeeeh!!!😊 I’m here all baboso 😝 lol excited about the recipe I’m watching it because I’m going to make it but I don’t have the insta pot but I will use the old crock pot aka slow cooker and cook it all night long so I might be able to cook a different beef cut cause we don’t have a butcher meat shop so some meat cuts are hard to find…Gracias for sharing this delicious recipe is like a new trend recipe and special if we can make it at home and just make more than plenty so we can eat next day and send everyone home with a container full of quesabirrias so they can enjoy the next day 😊…and we are fine with the beef 🥩 cause we don’t do goat meat or lamb Gracias once again!!     It was really nice to meet you all last week or so when you live streamed! These tacos look so good I will try them next week. Thank you for all your recipes and techniques, last week I made your red enchiladas with your Mexican rice, with your red hand ground salsa for the chips and beans. It was really nice to be able to put together a whole Mexican dinner! I've been working on being able to do that for a long time, and you got me there! Thanks again for sharing with us.

    The Mexican abuela that taught me to make birria the day before you make the Birria take a big can of enchilada sauce and add tallow and bacon fat (8 oz. of both add slowly) to it bring it to a simmer, then refrigerate overnight after cooling in the morning the fat you added solidifies on top of the enchilada sauce. You end up with the beautifully red and flavorful fat whenever you want to add flavorful fat to a dish or a quick birria. I was told dunking the tortillas, makes them to weak.

    Saludos Dios los bendiga ,Que utilizas para que no se pegue la tortilla al sartén las tortilla que tengo son tortillas la milagrosa ,porque moje la tortilla en el caldo tal como lo hiciste pero se quedaron pegada al sartén y al tratar voltearla de rompio

      She did say in a another video that chili puya are the most spicy ones but i can tell you that im super sensitive to spicy food but I made the sauce and yes it’s spicy but it’s manageable, just make sure u take out all of the seeds 😊

    I love that Staub crepe cast iron pan. It holds heat so well. Please consider not wearing gloves, they are pure landfill. I prefer to wash my hands with hot soapy water. Not beating you up, just asking to consider it.

      Most US supermarkets don't sell it, but a real butcher will, especially if you have a Mexican grocer/butcher nearby.
