I mostly followed the red sauce recipe which is a fire recipe. Didn't have puya chili, cloves, or whole cumin (used cumin powder). Added chili de arbol, used 14 ounces of crushed tomatoes vs. tomatoes, added beef bouillon and better than bouillon beef base to the 2 cups chili soaking water. Plus added a can of chipotles in adobo sauce. Smoked the meats for a short period which were chuck roast and short ribs and then braised in a dutch oven with the red sauce. So good and wouldn't have came out nearly as good without this video and recipe as the base!

The Mexican abuela that taught me to make birria the day before you make the Birria take a big can of enchilada sauce and add tallow and bacon fat (8 oz. of both add slowly) to it bring it to a simmer, then refrigerate overnight after cooling in the morning the fat you added solidifies on top of the enchilada sauce. You end up with the beautifully red and flavorful fat whenever you want to add flavorful fat to a dish or a quick birria. I was told dunking the tortillas, makes them to weak.

She did say in a another video that chili puya are the most spicy ones but i can tell you that im super sensitive to spicy food but I made the sauce and yes it’s spicy but it’s manageable, just make sure u take out all of the seeds 😊
I love that Staub crepe cast iron pan. It holds heat so well. Please consider not wearing gloves, they are pure landfill. I prefer to wash my hands with hot soapy water. Not beating you up, just asking to consider it.
