That then got locked in as the vogue with the industrial revolution where efficiency and price became the norm over quality, particularly for the wiring class who no longer had time to cook some of the nicer meals. There are also a lot of other sorts of sausages that are prepared in the same way as a frankfurter (hot dog) which aren't generally more processed than most other sorts of similar sausage, it's just that the grind on the meat is finer than for instance, your average sweet italian sausage, which has a more coarse grind.
