people need to realize msg isn't bad if consumed in moderation. it's a natural chemical produced by your body anyways.
The major issue with MSG is that it's a salt, so it will come with all of the problems that are associated with high sodium intake. Other than that? It's perfectly fine to eat!

I think the rant was his way of coping with heaviness of the food.

if you're used to eating that way you will learn to build a tolerance to hot and spicy food. He also works out, so it's possible that he just burns it all off

Not drinking the broth is something I don't understand about many pho eaters. Broth is pretty much the most time-consuming and characteristic element of pho. You basically determine the quality and skill of a pho shop from the broth alone. Other elements like the meat (knife skill) and noodle (if made fresh) are a lot more subtle and only matter in more high-end places.

A trick on clients. Don't support such places. I pay 6 pln/2.65 Deutsche Mark/1.35 EUR for a decent Pho. I get 400ml dish to play with, mostly with souces. In all seriousness, 2 lbs of noodles and 2 lbs of meat is not that much food!!! The trick is to eat the noodle first so it doesn’t soak up the broth and make it heavier. If you can knock out the noodle first, than it easy to finish the meat. Note- Broth is optional to finish.

It depends on a person. In general that large portion would most likely land you in the bathroom with stomach pain, head pain, constipation, profuse sweating, and nausea also in some cases death.
