      Hi Zade, you will need a baking sheet for this recipe. You can use one large baking sheet, or two smaller sheets if you don't have a large one!

      @@rheachowdhary6683 Hi there, you can use the same quantity of Yukon golds, but go for 3 if they're on the small side. HOWEVER, I prefer using Russets in this recipe, as they turn crispier, with a fluffier center.

    Would you recommend putting this under a broiler for a minute after adding the Parmesan? Then taking out of the oven to add the herbs?

      Hi there! There's no need to broil the fries after adding the parmesan, as it will melt onto the hot fries. That being said, if your fries aren't as dark as you'd like them, you can pop them back in the oven after you add the parmesan. I hope you enjoy!

      Hi there! Yes, you can use aluminum foil instead of parchment paper, but I suggest spraying it with cooking spray or rubbing it lightly with oil before adding the potatoes to ensure that they don't stick. I hope you enjoy!

      Try to defrost them and break them apart then put them in the oven again, that might work. If not, you’ll just have to make them fresh every time.

    Thanks much for the recipe. This came out real well .But I faced an issue with respect to the potato fries sticking to the wax paper post the 20 min , making it difficult to flip over.Some places the paper just tore off. What can I do to avoid this ?

      I also used parchment paper and mines came out fine. Make sure to add a good amount of oil before and after adding the fries on it and you should be good.

      Thank you for subscribing! For sweet potatoes, omit the soaking and drying steps. Also, the fries won't take as long to cook, so check them at 15 minutes before flipping. I hope you enjoy!

      Oh no! I would also check your oven temperature. All ovens are different, and it's very common for them to run hot or cold (my last oven ran 50 degrees hotter than what the dial said!).

      The parchment paper prevents the fries from sticking, but if you don't have parchment then spray your pan well with cooking spray (in addition to adding the oil). I hope you enjoy!

    Can I soak them in hot water for hours instead of 10-15 mins only? As in, soak them in the morning in hot water and actually go to bake them in the evening?

      Hi, you should soak them in hot water before cooking, but you can soak them in cold water in the morning and refrigerate them (that will prevent the potatoes from browning). In the evening, drain the fries then soak them in hot water as directed. I hope this helps!

      Hi there! Baby potatoes won't work as well in this recipe, as you won't be able to get the same cut and texture. For those, I would go ahead and roast them whole (no soaking needed). Enjoy!

      Hi there! If the fries weren't crispy I suspect they weren't backed for long enough. All ovens vary slightly, and in the future you might need to leave the fries in longer, until they're thoroughly browned. I hope this helps!!
