The doll on the string went into the box at the end of the track that the cheetah ran past just as it started braking. The trainer is waiting past that box with the food reward.
The best part is, it was probably holding back because it knew this was just a game. When animals are in the wild, hunting to survive, they don't hold back.

For example, you can't threaten an animal with death to make them behave. That being said you can treat an animal cruelly like you would a slave, but I do not see that kind of treatment in this video.

This cheetah did not get anywhere near 70MPH. Captive cheetahs are the slowest simply because they are not fighting for their survival and have not been condition to survive. Wild cheetahs approach 70, not captive. Captive get closer to 50 maxed out.
