Do you want to make money with microgreens for real; then you need distribution and that means certification.     So glad you decided to refocus. I think that was the right choice and months from now when money is less constrained, I think you'll look back at this and be more than satisfied with your decision.

    Have you seen how some people grow on coconut mats or rockwool mats? No soil means they can bring it into the kitchen. Sell it live

    Ground Control to TRM & MTRM, difficult choice but lessons have been learned but a New Year and new focus and when the business is bigger then you can always use what you have learned to make more money.

    We need regulations for safety. Unfortunately not all regs are needed and are costly for production. This is in all fields when government gets involved, especially when you become efficient but need to keep your job. Enough about that.
    I have in the process, been experimenting with trees. Some of these are bananas [not a tree ] papayas. Near future limes, mango, mulberries, kiwi, passion fruit and any others that come to mind. These are all done in aquaponics systems.

    When you said "wash your veggies" I was half way done with unwashed raspberries. I thought that label was just a CYA for the produce company. Lol

    I think that you made the right decision.
    Liability is a problem. "Aunt Jemima" used to make frozen pancakes -- until Listeria appeared in some of them. Now Aunt Jemima is no longer in the pancake business.
    Likewise, a little local dairy in my area was doing nicely -- until Listeria in their milk killed a couple of people (a baby and an old man). The dairy had only recently passed a state inspection, and no one could determine how the contamination occurred. Nevertheless, the dairy soon closed.

    I have never seen any type of filtration for your aquaponics systems. Use the bubbler as a large bio filter for your aquaponics systems. All you need is to plum it into the pumps and add media. Might want to first use a swirl filter and then the bio filter and allow gravity to dump back into the tanks.

    Have you found a organic alternative to the mats? The last few I looked at I found that chemicals were used on them and that turned me off from using mats. Enjoy watching your videos been watching since Cody mentioned you years ago.

    i have an idea dont know if it would work or not but here it is you cuold use a food digester to create methane wich you could then burn for heating wich could save you some money on propane

    My Question is, if you are going to just produce enough to cover the cost of the current building operations then how are you going to do the second hab if your only making enough to maintain the first building. I thought that was the whole point of doing the micro greens is to pay for the research and development of your original plan, witch was going to be what the second building was going to be solely for.

    Your fans are all facing down, which would naturally pull down the hot air from above. That is probably why the vegetables got wilted. Perhaps if you could reverse the turn of the fans or just turn them upside down, you could bring up the cool air from the ground. Just a thought ....

    Could you grow seedlings for other people to plant in their gardens that you could sell at a farmers market. It could be a way to use all your production area.

    If your staying raw ag, Does that mean you can't make a salad mix or a blend of microgreens without it being "food". have to keep them isolated?

    Not really a scaleable business, so easy to do children can grow greens for their families. Your overcomplicating a simple thing. Upside down business idea, too much time and energy for profit. But for family consumption, it's an excellent idea. Not trying to bash you, but the whole micro thing has been done many times before with same outcome. Too much time to be financially scalable to be profitable. Seriously enjoyed your video! Thank you for your time!
