THAI FOOD AT HOME with Jet Tila & Eitan Bernath| Part 1: Massaman Curry & Hom Mali Rice ThaiTradeUSA

  • This week I'm cooking with 18-year-old Eitan Bernath, who has already cut his teeth on numerous Food Network contests and is currently the Principal Culinary Contributor to the Drew Barrymore Show. Eitan's a TikTok whiz, but does he know the basics of Thai Hom Mali Rice and Massaman Curry? Let's get busy with our box of ingredients from Thailand.
    RECIPES
    Chef Jet Tila’s Massaman Curry recipe
    Active Work time is 15 minutes. Total preparation time is 1 hour.
    4-6 tbsp. Massamun Curry Paste
    2 Shallots, sliced thin
    6 cups Coconut milk
    1.5 - 2 lbs. Beef flank, thin sliced.
    1/4 cup Dry Roasted peanuts
    3 yellow Potato, medium dice
    2 tsp. Fish Sauce
    1 tsp. Sugar
    1 tbsp. Tamarind Paste
    1/2 small Brown Onion (thin sliced)
    1/4 cup Fried Garlic
    To garnish Cilantro
    In a medium saucepan, heat 3 tbsp. of coconut milk to medium and stir in curry paste, shallots, and lime leaves. Stir-fry for about 30 seconds until paste starts to brown.
    Stir in remaining coconut milk into curry paste. Increase heat to high until boiling and add basil leaves. Allow to boil for about 10 minutes or until reduces about 1/3.
    Reduce to simmer. Add potatoes and peanuts, cover, let simmer for about 5 to 10 minutes. Add beef, fish sauce, Tamarind, and sugar. Let simmer for about 5 to 10 minutes or until Beef and vegetables are cooked through. Serve hot and garnish with fried garlic and cilantro.
    Chef Jet Tila’s Perfect Jasmine Rice recipe
    1 cup (250g) long-grain jasmine rice
    1 3/4 (475 l) cup water
    Add rice to a fine mesh strainer and rinse under cold running water while swirling with your fingers to wash the rice. Wash the rice for about 30 seconds and then rinse for about a minute.
    Add the rice to a 2-quart saucepan. Insert your index until touching the top of the rice with your finger tip. Add water until the water just reaches the first crease of your finger. Bring your heat to high. As soon as the water reaches a boil, give everything a good stir, reduce to a low simmer, and cover the pot. After 20 minutes, turn off the burner, remove the pot from the heat, and let it sit for at least 15 minutes before fluffing with a fork and serving.

    My Mom told how to cook rice this way. Works everytime and we used Suriname rice. One of our greatest export.
