- After teaching Eitan Bernath some authentic Thai dishes, he's turning the tables on me and introducing his recipe for Thai Bruschetta. I wasn't ready for the flavor explosion!
RECIPE
Eitan Bernath’s Thai Bruschetta recipe
Prep Time: 15 | Cook Time: 2 minutes | Serving Size: 12 pieces
Ingredients
For the Bruschetta
1 cup diced plum tomatoes
3 rambutan (fresh or canned), deseeded and diced
1 small garlic clove, grated
1 Thai chili, minced
1/2 inch ginger, peeled and grated
1 tablespoon lime juice
1 1/4 teaspoon fish sauce
1/4 teaspoon Thai palm sugar
8-10 Thai basil leaves, julienned
Lime leaves, julienned, for garnish
For the Rice Paper Crackers
1-2 sheets Thai rice paper, broken into 1-2 inch sized pieces Neutral oil, for frying
Directions
In a medium mixing bowl, add all of the ingredients, except for the lime leaves. Stir to combine, then cover and set aside to allow the flavors to marry.
In a medium sized skillet, add 1-2 inches of neutral oil and heat to 400 degrees F. Add 2 rice paper pieces and fry until puffed, about 10 seconds. Remove from the oil and allow to drain on a paper towel lined baking sheet. Repeat until all pieces have been fried.
To assemble, add a tablespoon of bruschetta to the fried rice paper and top with julienned lime leaves.
