In my opinion, the transom doesn't have much support around the motor mounting holes. In its original design the wood core was used for strength. I don't necessarily think it's a failure on seacast. Most likely a lack of strength which could be improved by glassing knees from the stringers to the top of the transom. Just my opinion. I hope you get it squared away.
Just curious you said that you think SeaCast is a good product, but that EcoWolf, the manufacturer of SeaCast, did a bad job installing their product. Given your poor results on this transom, how do you know the SeaCast itself is a good product? What is leading you to that conclusion given the complete failure of this transom rebuild? EcoWolf not standing behind their "guarantee" reflects extremely poorly on EcoWolf; especially since you paid them to do the work using their own product. Your experience would certainly cause me to reconsider using EcoWolf's SeaCast product. Any additional information you could provide would be valuable.

Carbon core is a copycat exactly made from Arjay and fails with 200lb test results. If you follow the instructions by Seacast™ there is NONE!
