I can't tell you how many times ive watched this one video. I love the perspective that you give and I like seeing others setup. I finally Opened Eazy's Street Food in Ellensburg Washington on March 8th. Im open Friday and Saturday nights from 11pm-2am outside of my local bars. I work Tuesday-Saturday still during the day and use one of the kitchens I work in as my location and commisary. I know how lucky I am with everything about my setup right now. Its been more fun than I expected serving my community and am happy with the average 400 in sales a night right now but am always looking to improve

I had one on my flat grill and it eventually melted due to the heat so I’m not sure if that would work. Maybe worth a try tho since they cost almost as much as a lighter on Amazon. Thanks for the input!!
I'm impressed, I'm 75 and looking to, maybe, get into this but can't move as fast these days as I use to. I was thinking on just a chili cheese dog type setup with chips and a drink. What's your opinion on keeping it simple and would you have any tips to share? You done an awesome job, thanks for the video.
Appreciate you and the comment!! I’m all about the K.I.S.S. Method (keep it simple stupid) and that’s why I only sell hotdogs. I think you’d do fine depending on location and foot traffic. My suggestion would be get a smaller cart so it’s easier to maneuver and hitch up. My cart is pretty heavy and as I get older I plan on down sizing my cart.

I personally dislike fryers with a passion. After working in a commercial kitchen for a couple decades and always having to deal with them, it’s not something I wanted on my cart. It’s insurance liability, slows production down, and last but not least I already had a fryer that I can use if I do private caterings.
I’ve used several different brands. Back then I was buying from Sam’s club and purchasing cases from them. Currently I’ve switched to using Costco Hotdogs and Hoffy brand Sausages. I’ll sell the Hoffy brand hotdogs as well if Costco is having stocking issues. I sell a lot so it’s hard to stick to one brand.
What do you charge for a catering like that, and what size were your dogs? Awesome video, good to see someone demonstrate how to handle a steady line and the importance of workflow. How long were you there total?
I was using the 4-1 hotdogs and if I remember correctly they had a tight budget so it was 600 for 80 hotdogs no chips or drinks. Service was just under two hours long. They did tip a hundred bucks too which was nice and unexpected.

@@340neptune i bought my cart 3 years ago and haven’t had to many issues. However I will say the parts they are using now aren’t as good as in the past. Plus he’s up his pricing too. Personally I would try and buy a used because more than likely you’ll have to replace the propane lines and rails no matter what.
I’ve tried several different methods. The way I’m currently cooking is totally different and I’ll try and make a video about it today if I don’t get to busy. Basically what I’m doing is heating them in the dirty water, then slightly grilling them after they’ve become hot and when and order comes in I now split the hotdog down the middle like a butterfly steak and sear the hotdog. I’ve gotten the most compliments from this method and have been doing it this way for a few months now.
just a small bit of advice,you need to speed up,at clip 29.18 you take an order and it takes 1 min 40 sec to complete,if theres 10 people in the line its going to be at least 15 min to serve the tenth coustomer,i think they would have waked away before then,from hotel chef of 12 years
you wouldn’t have to pick up anything if you took care of the people that came up and asked you for a hotdog and you turned them down I’ve been a businessman for 35 years. I’ve never ever turned anyone down turning people down as while you’re sleeping dogs for a living.

I have a very lucrative business in Washington DC and I even never even turn on the fucking homeless, fucking monkeys the common ask me for something for free down so it’s a good piece of advice. Karma works don’t turn people down no matter what even if you have to give it to them for free.

Instead of matches and lighters, couldn't you install a push button grill igniter?
