⬇️⬇️English recipe follows⬇️⬇️ 雞蛋菠菜 材料: 菠菜苗一斤 雞蛋3隻 處理: 1. 菠菜,打橫一開二,切去頂部,清水浸5分鐘,清水沖洗幾次直至完全乾淨,擎乾水。 2. 預備醬汁: a. 生粉一茶匙 b. 豆瓣醬一湯匙 c. 蠔油半湯匙 d. 糖一茶匙 加入清水100毫升,攪勻。 烹調: 1. 大火煲滾一鑊水。 2. 加入鹽2茶匙及油一湯匙。 3. 放菠菜落鑊,灼至軟身。 4. 撈起菠菜,擎乾水。 5. 大火在鑊內燒熱油一湯匙。 6. 雞蛋,打勻,倒入鑊內,炒成滑蛋,加入醬汁,大火滾起至收汁。 7. 菠菜,放碟上。 8. 雞蛋,放在菠菜上。 9. 完成,可享用。 Boiled spinach with scrambled eggs Ingredients: Baby spinach 1 catty Eggs 3 Nos. Preparation: 1. Spinach, divide it into 2 shares horizontally. Cut off the root. Soak in tap water for 5 minutes. Rinse several times until it is totally clean. Drain. 2. Prepare sauce: a. Tapioca starch 1 tsp b. Chili bean sauce 1 tbsp c. Oyster sauce 0.5 tbsp d. Sugar 1 tsp Add in 100ml of water, mix well. Steps: 1. Heat up a wok of water at high flame. 2. Add in 2 tsp of salt and 1 tbsp of oil. 3. Put spinach in the wok. Boil until it turns soft. 4. Pick up the spinach, drain. 5. Heat up 1 tbsp of oil at high flame in wok. 6. Eggs, get them whisked. Pour in the wok. Fry it into scrambled eggs. Add in the sauce. Heat up at high flame until the sauce becomes thick. 7. Spinach, put on plate. 8. Eggs, put on top of the spinach. 9. Complete. Serve.
