  • Can you make a suitable replacement for Corn Nuts in your freeze dryer that is not fried or baked in oil? I am always looking for a healthier alternative for snacks (like corn nuts). The freeze dryer has been a helpful way to do that because it will give many foods a crunch similar to high fat, high calorie snacks without having to fry them or bake them in oil. Corn nuts also have a unique shape. It's mor difficult than just freeze drying some corn kernels (although they ARE mighty tasty). As a kid, we ate a lot of hominy from the can. Hominy is a fermented corn cooked using the process of nixtamalization. Freeze-dried hominy is here to save the day! It has the same shape as corn nuts, and with the help of the freeze dryer a crunch as well.     How about a pozole recipe using these? Freeze dried chicken and green chili soup, or with red chiles and pork, with the freeze dried hominy.

    Grew up eating hominy 50 or 60 years ago as a common side for supper, I'll have to try that looks good.

    If you broil the hominy prior to FD’ing it , you’ll get crunch and it won’t fall apart. I can’t take credit, Chez Gave us the secret to keeping them crunchy back in March. 😃👍

      @@live.life.simple. , I’m not sure, but it can’t hurt to try.
      I did try the broil first method and it did work.
      They’re not super hard like cornets but they’ve got a crunch to them rather than the powdery “Mouthful of cornmeal” texture that you get without it.
      Let us know how the air drying works because it’d be not as hot as broiling in the summertime.
      * If you do try the broiling method, you need to have only a single layer when broiling, otherwise you kick too much steam up into the upper kernels from the lower kernels. Kinda like when you brown too much meat in a pan at once and it all goes gray instead of actual browning. 😃

      @@trishcraig723 , yes, we know this.
      We’re talking about the hack to get them to work in the FD’r. It’s to broil them first. It may work air frying too. But I know fur a fact that the broiled method works as I’ve tried it. 😃👍

    I didn’t like them. Not crunchy, just moisture sucking in the mouth. I put them under the broiler before FD.

    We made two kinds to try the idea a few months ago. One batch with taco seasoning, one batch with ranch dressing. The taste isn't bad, but I found them too dry for just snacking. I will add them to soups and such.

    Corn Nuts are made from parched yellow dent field corn. The Native Americans developed the recipe and modern people took the recipe and adapted it to mechanized processing.

    Great idea. You got the right corn for the job. Frying or deep frying is probably the answer, like you said and will give them a more golden color.

    Look at the can... It will be either white or yellow corn/hominy. So... the color is not dependent upon the cooking method, it's entirely dependent upon the color of the corn kernels.
    Edit: Some things simply can't be replicated in the freeze dryer. You could get a good copycat version by baking it in a large air fryer with a minimal spritz of oil.

    Might be one to try on the dehydrator instead of the freeze-dryer. One of my favorite things about getting good at freeze drying is that it is made me much better with my dehydrator as well.

    It never would have occurred to me, a person who has been known to enjoy a bag of corn nuts. Every once in a while, to ever attempt to make them in the freeze dryer, which takes out all the moisture and leaves everything crushable. A corn nut is supposed to be hard, the only way to crush it would be with a hammer.

    Perhaps cooking the Hominy in a dry skillet a bit before FDing might help the crunch. I'm sure the store bought versions are fried.

    Ok- I think they use a special type of corn from central or south america, the grandaddy of todays corn .

    This does not have to do with this vid, but we are getting severe moisture on our door as we are in the freeze drying process, i have to put a shaver pan to collect the water coming off the door any suggestions ? Thank you, the funnel works awesome

    I've never heard of corn nuts. My dad used to say corn and oats were for livestock lol.

    I open the door all the way when loading. It cuts on the aggravation of it coming back to close. Looked like you had the room to open it all the way. Where do rank this snack 1-10?
