if used for it's intended purpose, this needs to be sharp, but generally you only grind or hone one edge, and not at a steep angle, probably no more than 45 to 48 degrees Now if you have other purposes in mind, like use as a medieval weapon it can have a finer edge. Yes, these were often used as weapons. They were used in Japan frequently, though the design was a bit different. You see for most, weapons like swords were banned, so they made common field tools into weapons and developed ways to use them effectively.

I was hoping for a chestnut handle. Oh well. next time you need to put something like this together, either use a little super glue, or solder it a bit just to hold it in place while you do the pins.

I don't understand what you call two component paint. It doesn't act like paint, it acts like a stain or something. Had it been actual paint, the handle would be white, not dark. then you wipe it off. That's not something I've seen before. May be common there, but isn't here.

For your handles though you should make them an oval not round as that will help you with edge alignment.
